llamamos método epóxico.
00:26
And I call it an epoxyepoxy methodmétodo because --
5
10000
2000
Lo llamo método epóxico porque
00:28
it's not very appetizingapetitoso. I understandentender that --

entiendo que no suene apetitoso,

¿qué es el epoxi?
00:34
It's two resinsresinas that are, sortordenar of,

del pan integral.
01:06
And let's facecara it, everyone'stodos tryingmolesto to movemovimiento towardshacia wholetodo grainsgranos.

3000
Y encarémoslo, todo mundo

we're finallyfinalmente gettingconsiguiendo to the pointpunto where we actuallyactualmente are tippingdar propinas over

(Risas)
01:21
The challengereto, thoughaunque, for a wholegraingrano integral bakerpanadero is,
29
65000
2000
Sin embargo, el reto para
el panadero integral es,
01:23
you know, how do you make it tastegusto good?
30
67000
3000
han de saber, ¿cómo hacer que sepa bien?
01:26
Because wholetodo graingrano -- it's easyfácil with whiteblanco flourharina
31
70000
2000
Porque el grano entero...
es fácil con la harina blanca
01:28
to make a good-tastingbuena degustación breadpan de molde. WhiteBlanco flourharina is sweetdulce.
32
72000
3000
hacer un pan de buen sabor,
porque la harina blanca es dulce;
01:31
It's mainlyprincipalmente starchalmidón, and starchalmidón, when you breakdescanso it down --
33
75000
3000
es principalmente almidón y
cuando se rompe el almidón...
01:34
what is starchalmidón? It's -- thank you -- sugarazúcar, yes.
34
78000
3000
¿qué es el almidón?
Es, gracias, azúcar, sí.
01:37
So a bakerpanadero, and a good bakerpanadero,
35
81000
2000
Entonces un panadero,
un buen panadero
01:39
knowssabe how to pullHalar or drawdibujar forthadelante
36
83000
3000
sabe cómo sacar ú obtener
01:42
the inherentinherente sugarazúcar trappedatrapado in the starchalmidón.
37
86000
3000
el azúcar inherente
contenido en el almidón.
01:45
With wholetodo graingrano breadpan de molde, you have other obstaclesobstáculos.
38
89000
2000
Con el pan integral
existen otros obstáculos,
01:47
You've got bransalvado, whichcual is probablyprobablemente the healthiestmás saludable partparte of the breadpan de molde for us,
39
91000
3000
tiene el salvado que es quizá
para nosotros la parte más saludable del pan
01:50
or the fiberfibra for us because it is just loadedcargado with fiberfibra,
40
94000
3000
o la fibra porque simplemente
está cargado de fibra
01:53
for the bransalvado is fiberfibra.
41
97000
2000
puesto que el salvado es fibra;
01:55
It's got germgermen. Those are the good things,
42
99000
2000
tiene el germen, estas son
las cosas buenas,
01:57
but those aren'tno son the tastiestmás sabroso partspartes of the wheattrigo.
43
101000
2000
pero no son las partes
más sabrosas del trigo.
01:59
So wholetodo graingrano breadspanes historicallyhistóricamente
44
103000
3000
Entonces históricamente
los panes integrales
02:02
have had sortordenar of this onuscarga of beingsiendo healthsalud foodcomida breadspanes,
45
106000
2000
han tenido como esta carga
de ser panes saludables
02:04
and people don't like to eatcomer,
46
108000
2000
que a la gente no le gusta comer,
02:06
quotecitar, healthsalud foodcomida. They like to eatcomer healthysaludable and healthilysaludablemente,
47
110000
3000
es decir, comida sana. Quieren comer
cada vez más saludablemente
02:09
but when we think of something as a healthsalud foodcomida,
48
113000
2000
pero cuando pensamos
en algo como comida sana,
02:11
we think of it as something we eatcomer out of obligationobligación,
49
115000
3000
pensamos que es algo que
debemos comer por obligación,
02:14
not out of passionpasión and love for the flavorsabor.
50
118000
3000
no por pasión y amor al sabor.
02:17
And ultimatelypor último, the challengereto of the bakerpanadero,
51
121000
3000
A final de cuentas, el reto del panadero,
02:20
the challengereto of everycada culinaryculinario studentestudiante, of everycada chefcocinero,
52
124000
2000
el reto de cualquier estudiante
de cocina, de cada chef,
02:22
is to deliverentregar flavorsabor.
53
126000
3000
es dar sabor.
02:25
FlavorSabor is kingRey. FlavorSabor rulesreglas.
54
129000
2000
El sabor es rey, el sabor manda,
02:27
I call it the flavorsabor ruleregla. FlavorSabor rulesreglas.
55
131000
2000
le llamo la ley del sabor,
el sabor manda.
02:29
And -- and
56
133000
2000
Y... y...
02:31
you can get somebodyalguien to eatcomer something that's good for them onceuna vez,
57
135000
3000
puedes hacer que alguien coma
algo que es bueno una vez,
02:34
but they won'tcostumbre eatcomer it again if they don't like it, right?
58
138000
3000
pero no lo volverán a comer
si no les gusta ¿cierto?
02:37
So, this is the challengereto for this breadpan de molde.
59
141000
2000
Así que este es
el reto para este pan.
02:39
We're going to try this at lunchalmuerzo, and
60
143000
2000
Lo vamos a probar en la comida y
02:41
I'll explainexplique a bitpoco more about it,
61
145000
2000
explicaré un poco más sobre él:
02:43
but it's madehecho not only with two typestipos of pre-doughspre-masa --
62
147000
3000
está hecho no sólo de
dos tipos de pre masas,
02:46
this attemptintento, again, at bringingtrayendo out flavorsabor
63
150000
2000
este intento, como decía,
de obtener el sabor
02:48
is to make a piecepieza of doughmasa
64
152000
2000
es hacer una pieza de masa
02:50
the day before that is not leavenedfermentado.
65
154000
3000
un día antes que no esté fermentado,
02:53
It's just doughmasa that is wetmojado.
66
157000
2000
es sólo masa húmeda.
02:55
It's hydratedhidratado doughmasa we call "the soakerdiluvio" --
67
159000
2000
Es una masa hidratada
que llamamos "la remojadora"...
02:57
that helpsayuda to startcomienzo enzymeenzima activityactividad.
68
161000
2000
que ayuda a iniciar
la actividad enzimática.
02:59
And enzymesenzimas are the secretsecreto, kindtipo of, ingredientingrediente in doughmasa
69
163000
3000
Y las enzimas son en cierta forma
el ingrediente secreto de la masa
03:02
that bringstrae out flavorsabor.
70
166000
2000
para sacar el sabor.
03:04
It startsempieza to releaselanzamiento the sugarsazúcares trappedatrapado in the starchalmidón.
71
168000
2000
Empieza a liberar los azúcares
contenidos en el almidón,
03:06
That's what enzymesenzimas are doing.
72
170000
2000
eso es lo que hacen las enzimas.
03:08
And so, if we can releaselanzamiento some of those,
73
172000
2000
Entonces, si podemos
liberar algunos de ellos
03:10
they becomevolverse accessibleaccesible to us in our palatepaladar.
74
174000
2000
se vuelven accesibles
a nuestro paladar.
03:12
They becomevolverse accessibleaccesible to the yeastlevadura as foodcomida.
75
176000
3000
Se vuelven accesibles a
la levadura como alimento,
03:15
They becomevolverse accessibleaccesible to the ovenhorno for caramelizationcaramelización
76
179000
3000
se vuelven accesibles al horno
para la caramelización
03:18
to give us a beautifulhermosa crustcorteza.
77
182000
2000
para darnos una hermosa corteza.
03:20
The other pre-doughpre-masa
78
184000
2000
La otra pre masa
03:22
that we make is fermentedfermentado -- our pre-fermentascenso.
79
186000
2000
que hacemos está fermentada,
es nuestro pre fermento.
03:24
And it's madehecho -- it can be a sourdoughde masa fermentada startermotor de arranque, or what we call a "bigabiga"
80
188000
3000
Está hecha... es como una masa fermentada
inicial que llamamos "biga"
03:27
or any other kindtipo of pre-fermentedpre-fermentado doughmasa with a little yeastlevadura in it,
81
191000
3000
o cualquier tipo de masa pre fermentada
que tiene un poco de levadura
03:30
and that startsempieza to developdesarrollar flavorsabor alsoademás.
82
194000
3000
y que también empieza
a desarrollar el sabor.
03:33
And on day two, we put those two piecespiezas togetherjuntos. That's the epoxyepoxy.
83
197000
3000
Al día siguiente, unimos
las dos piezas y ese es el epoxi,
03:36
And we're hopingesperando that, sortordenar of, the
84
200000
2000
que esperamos sea como
03:38
enzymeenzima piecepieza of doughmasa
85
202000
2000
la pieza de masa enzimática
03:40
becomesse convierte the fuelcombustible packpaquete for the leavenedfermentado piecepieza of doughmasa,
86
204000
3000
que se convierte en el combustible
que sube la masa
03:43
and when we put them togetherjuntos and addañadir the finalfinal ingredientsingredientes,
87
207000
3000
y cuando los unimos y agregamos
los ingredientes finales
03:46
we can createcrear a breadpan de molde that does evokeevocar
88
210000
2000
podamos crear un pan
que en efecto extraiga
03:48
the fullcompleto potentialpotencial of flavorsabor trappedatrapado in the graingrano.
89
212000
3000
el potencial completo del
sabor contenido en el grano.
03:51
That's the challengereto. Okay, so, now, what we --
90
215000
2000
Ese es el reto. Bien,
ahora lo que nosotros...
03:53
in the journeyviaje of wheattrigo, let's go back and look at these 12 stagesetapas.
91
217000
4000
en el trayecto del trigo, regresemos
y observemos estas 12 etapas.
03:57
I'm going to go throughmediante them very quicklycon rapidez and then revisitvolver a visitar them.
92
221000
2000
Voy a recorrerlas rápidamente
y las iremos discutiendo.
03:59
Okay, we're going to startcomienzo with the first stageescenario.
93
223000
3000
Bien, comencemos
con la primera etapa
04:03
And this is what everycada studentestudiante has to beginempezar with.
94
227000
3000
que es donde cada estudiante
tiene que empezar.
04:06
EveryoneTodo el mundo who workstrabajos in the culinaryculinario worldmundo knowssabe that
95
230000
2000
Cualquiera que trabaje en
el mundo culinario sabe que
04:08
the first stageescenario of cookingcocina is "misemise enes placelugar,"
96
232000
3000
la primera etapa en la cocina
es "mise en place"
04:11
whichcual is just a Frenchfrancés way of sayingdiciendo, "get organizedorganizado."
97
235000
4000
que es sólo una forma de
decir en francés "organízate".
04:16
Everything in its placelugar. First stageescenario.
98
240000
3000
Todo en su lugar, primera etapa.
04:19
So in bakinghorneando we call it scalingescalada -- weighingpeso out the ingredientsingredientes.
99
243000
2000
En panadería le decimos pasar la báscula,
pesar todos los ingredientes.
04:21
StageEscenario two is mixingmezclando. We take the ingredientsingredientes and we mixmezcla them.
100
245000
3000
Segunda etapa: mezclado; tomamos
los ingredientes y los mezclamos.
04:24
We have to developdesarrollar the glutengluten.
101
248000
2000
Tenemos que desarrollar el gluten;
04:26
There's no glutengluten in flourharina. There's only the potentialpotencial for glutengluten.
102
250000
3000
la harina no tiene gluten, sólo
el potencial para hacer gluten.
04:29
Here'sAquí está anotherotro kindtipo of prefiguringprefiguración of epoxyepoxy
103
253000
3000
Aquí tenemos otro tipo
de antecesor de epoxi
04:32
because we'venosotros tenemos got gluteninglutenin and gliadingliadin,
104
256000
2000
porque tenemos glutenina y gliadina,
04:34
neitherninguno of whichcual are strongfuerte enoughsuficiente to make a good breadpan de molde.
105
258000
3000
ninguno de las cuales tiene la fuerza
suficiente para hacer un buen pan.
04:37
But when they get hydratedhidratado and they bondenlace to eachcada other,
106
261000
3000
Pero cuando se hidratan
y se enlazan entre sí,
04:40
they createcrear a strongermás fuerte moleculemolécula, a strongermás fuerte proteinproteína we call glutengluten.
107
264000
4000
crean una molécula más fuerte,
una proteína más fuerte que es el gluten.
04:44
And so we, in the mixingmezclando processproceso,
108
268000
2000
Entonces, en el proceso de mezclado,
04:46
have to developdesarrollar the glutengluten,
109
270000
2000
tenemos que desarrollar el gluten
04:48
we have to activateactivar the leavenlevadura or the yeastlevadura,
110
272000
3000
activando el fermentador o la levadura
04:51
and we have to essentiallyesencialmente distributedistribuir all the ingredientsingredientes evenlyigualmente.
111
275000
3000
y tenemos que distribuir básicamente
todos los ingredientes por igual.
04:54
Then we get into fermentationfermentación, the thirdtercero stageescenario,
112
278000
2000
Entonces pasamos a
la fermentación, la tercera etapa,
04:56
whichcual is really where the flavorsabor developsdesarrolla.
113
280000
2000
que es donde en realidad
se desarrolla el sabor.
04:58
The yeastlevadura comesproviene aliveviva and startsempieza eatingcomiendo the sugarsazúcares,
114
282000
3000
La levadura se activa y
empieza a comer azúcares
05:01
creatingcreando carboncarbón dioxidedióxido and alcoholalcohol --
115
285000
2000
creando dióxido de carbono y alcohol,
05:03
essentiallyesencialmente it's burpingeructar and sweatingtranspiración, whichcual is what breadpan de molde is.
116
287000
3000
en esencia eructo y
sudor que hacen al pan,
05:06
It's yeastlevadura burpsEructos and sweatsudor.
117
290000
2000
es el eructo y el sudor
de la levadura.
05:08
And somehowde algun modo, this is transformedtransformado --
118
292000
2000
Y de alguna forma, esto se transforma...
05:10
the yeastlevadura burpsEructos and sweatssudores are laterluego transformedtransformado --
119
294000
3000
el eructo y el sudor de
la levadura se transforman...
05:13
and this is really gettingconsiguiendo to the heartcorazón of what makeshace breadpan de molde so specialespecial
120
297000
3000
y esto en efecto es el meollo de
lo que hace al pan tan especial,
05:16
is that it is a transformationaltransformacional foodcomida,
121
300000
2000
es alimento en transformación
05:18
and we're going to exploreexplorar that in a minuteminuto.
122
302000
2000
y vamos a explorar
esto en un minuto.
05:20
But then, quicklycon rapidez throughmediante the nextsiguiente fewpocos stagesetapas.
123
304000
2000
Entonces, vamos rápido
con las siguientes etapas,
05:22
We, after it's fermentedfermentado and it's developeddesarrollado,
124
306000
2000
después de fermentar y amasar,
05:24
startedempezado to developdesarrollar flavorsabor and characterpersonaje,
125
308000
2000
empezamos a desarrollar
el sabor y el carácter,
05:26
we dividedividir it into smallermenor unitsunidades.
126
310000
2000
y dividimos la masa
en pequeñas unidades.
05:28
And then we take those unitsunidades and we shapeforma them. We give them a little pre-shapepreforma,
127
312000
3000
Luego tomamos estas unidades y
las moldeamos, les damos una forma inicial
05:31
usuallygeneralmente a roundredondo or a little torpedotorpedo shapeforma, sometimesa veces.
128
315000
3000
a menudo redonda o a veces
en forma de torpedo,
05:34
That's calledllamado "roundingredondeo."
129
318000
2000
a esto le llamamos "redondear."
05:36
And there's a shortcorto restdescanso periodperíodo. It can be for a fewpocos secondssegundos.
130
320000
3000
Viene entonces un breve reposo,
que puede ser de unos segundos,
05:39
It can be for 20 or 30 minutesminutos. We call that restingdescansando or benchingbanco.
131
323000
3000
o puede ser de 20 ó 30 minutos,
esto es el reposo.
05:42
Then we go into finalfinal shapingorganización,
132
326000
2000
Ahora le damos la forma final,
05:44
"panningpanorámica" -- whichcual meansmedio puttingponiendo the shapedconformado loafpan on a panpan.
133
328000
4000
"el moldeado", esto es colocar
la hogaza formada en un molde;
05:48
This takes a secondsegundo, but it's a distinctivedistintivo stageescenario.
134
332000
4000
esto toma un segundo,
pero es una etapa distintiva,
05:52
It can be in a basketcesta. It can be in a loafpan panpan, but we panpan it.
135
336000
4000
puede ser en canasta, puede ser en hogaza,
pero nosotros lo hacemos en molde.
05:56
And then, stageescenario ninenueve.
136
340000
2000
Y luego, la novena etapa.
05:58
The fermentationfermentación whichcual startedempezado at stageescenario threeTres is continuingcontinuo
137
342000
3000
La fermentación que comenzó
en la tercera etapa continúa
06:01
throughmediante all these other stagesetapas. Again, developingdesarrollando more flavorsabor.
138
345000
3000
durante todas estas etapas y
en cada una, desarrollando más sabor.
06:04
The finalfinal fermentationfermentación takes placelugar in stageescenario ninenueve.
139
348000
2000
La fermentación final ocurre
en la novena etapa,
06:06
We call it "proofingpruebas."
140
350000
2000
que llamamos "de prueba."
06:08
ProofingProofing meansmedio to proveprobar that the doughmasa is aliveviva.
141
352000
3000
De prueba porque se prueba
que la masa está viva;
06:11
And at stageescenario ninenueve we get the doughmasa to the finalfinal shapeforma,
142
355000
3000
en la novena etapa es cuando
le damos forma final a la masa
06:14
and it goesva into the ovenhorno -- stageescenario 10.
143
358000
2000
y entra al horno, la décima etapa.
06:16
ThreeTres transformationstransformaciones take placelugar in the ovenhorno.
144
360000
3000
En el horno ocurren
tres transformaciones:
06:19
The sugarsazúcares in the doughmasa caramelizecaramelizar in the crustcorteza.
145
363000
3000
los azúcares de la masa se caramelizan
para hacer la corteza
06:22
They give us that beautifulhermosa brownmarrón crustcorteza.
146
366000
2000
dándole esa hermosa corteza café;
06:24
Only the crustcorteza can caramelizecaramelizar. It's the only placelugar that getsse pone hotcaliente enoughsuficiente.
147
368000
3000
sólo la corteza puede caramelizarse
porque es el único lugar con calor suficiente.
06:27
InsideDentro, the proteinsproteínas --

Dentro, las proteínas,
06:29
this glutengluten -- coagulatescoagula.
149
373000

es decir el gluten, se coagulan.
06:31
When it getsse pone to about 160 degreesgrados,
150

Cuando se alcanzan cerca
de los 160 grados,
06:33
the proteinsproteínas all linelínea up

151

todas las proteínas se alinean
y crean una estructura,
06:35
the glutengluten structureestructura --
152
379000
2000
la estructura del gluten,
06:37
what ultimatelypor último we will call the crumbmiga of the breadpan de molde.
153
381000
3000
lo que a fin de cuentas
llamamos la migaja del pan.
06:40
And the starchesalmidones, when they reachalcanzar about 180 degreesgrados,
154
384000
2000
Los almidones se solidifican
06:42
gelatinizegelatinizar.
155
386000
2000
cuando alcanzan
los casi 180 grados.
06:44
And gelatinizationgelatinización is yettodavía anotherotro
156
388000
3000
Y esta solidificación
es una transformación

157

más dentro del horno.
06:49
CoagulationCoagulación, caramelizationcaramelización and gelatinizationgelatinización --

Coagulación, caramelización

06:52
when the starchalmidón is thickgrueso and they absorbabsorber all the moisturehumedad that's around them,
159
396000

cuando el almidón es grueso y
absorbe toda la humedad de su alrededor,
06:55
they -- they kindtipo of swellhinchar, and then they burstráfaga.
160

como que se hincha y luego revienta,
06:58
And they burstráfaga, and they spillderramar theirsu gutstripas into the breadpan de molde.
161

3000
y cuando revienta, esparce
sus entrañas en el pan.
07:01
So basicallybásicamente now we're eatingcomiendo yeastlevadura sweatssudores --

Así que básicamente estamos
comiendo sudor de levadura,

163
407000

sudores, eructos y entrañas de almidón.
07:06
Again, transformedtransformado in stageescenario 10 in the ovenhorno
164
410000
3000
En el horno, en la décima etapa,
una transformación más
07:09
because what wentfuimos into the ovenhorno as doughmasa
165
413000
3000
porque lo que entró
al hormo como masa
07:12
comesproviene out in stageescenario 11 as breadpan de molde.
166
416000
3000
en la onceava etapa
sale como pan.
07:15
And stageescenario 11, we call it coolingenfriamiento --
167
419000
2000
Y a esta onceava etapa
la llamamos enfriamiento,
07:17
because we never really eatcomer the breadpan de molde right away.
168
421000
2000
porque en realidad nunca
comemos el pan en seguida,
07:19
There's a little carry-overContinuar bakinghorneando.
169
423000
2000
tiene una breve cocción posterior.
07:21
The proteinsproteínas have to setconjunto up, strengthenfortalecer and firmfirma up.
170
425000
3000
Las proteínas se tienen que
asentar, fortalecer y endurecer;
07:25
And then we have stageescenario 12, whichcual the textbookslibros de texto call "packagingembalaje,"
171
429000
4000
luego tenemos la doceava etapa,
que los libros de texto llaman "empaque"
07:29
but my studentsestudiantes call "eatingcomiendo."
172
433000
2000
pero que mis estudiantes llaman "comer."
07:31
And so, we're going to be on our ownpropio journeyviaje todayhoy from wheattrigo to eatcomer,
173
435000
3000
Así hoy recorreremos el trayecto
del trigo al alimento
07:34
and in a fewpocos minutesminutos we will try this,
174
438000
2000
y en unos cuantos minutos
vamos a intentar esto,
07:36
and see if we have succeededtenido éxito
175
440000
3000
para ver si hemos triunfado en
07:39
in fulfillingcumpliendo this baker'spanadería missionmisión of pullingtracción out flavorsabor.
176
443000
3000
cumplir con la misión del
panadero de obtener el sabor.
07:42
But I want to go back now and revisitvolver a visitar these stepspasos,
177
446000
3000
Pero ahora quisiera retroceder
y revisar estos pasos,
07:45
and talk about it from the standpointpunto de vista of transformationtransformación,
178
449000
2000
abordarlos desde el punto
de vista de la transformación;
07:47
because I really believe that
179
451000
2000
porque en verdad creo que
07:49
all things can be understoodentendido --
180
453000
3000
todas las cosas se pueden entender,
07:52
and this is not my ownpropio ideaidea. This goesva back to the ScholasticsEscolásticos and to the AncientsAntiguos --
181
456000
3000
y no es mi propia idea sino que proviene
de los escolásticos y de la antigüedad,
07:55
that all things can be understoodentendido on fourlas cuatro levelsniveles:
182
459000
2000
que todas las cosas se pueden
entender en cuatro niveles:
07:57
the literalliteral, the metaphoricmetafórico or poeticpoético levelnivel,
183
461000
4000
el literal, el metafórico o poético,
08:01
the politicalpolítico or ethicalético levelnivel.
184
465000
3000
el político o ético,
08:04
And ultimatelypor último, the mysticalmístico or sometimesa veces calledllamado the "anagogicalanagógico" levelnivel.
185
468000
4000
y por último, el nivel místico o
en ocasiones llamado "anagógico".
08:08
It's harddifícil to get to those levelsniveles unlessa no ser que you go throughmediante the literalliteral.
186
472000
3000
Resulta difícil llegar a estos niveles
a menos que atravesemos el literal.
08:11
In facthecho, DanteDante saysdice you can't understandentender the threeTres deeperMás adentro levelsniveles
187
475000
3000
De hecho, Dante dijo que no se pueden
comprender los tres niveles más profundos,
08:14
unlessa no ser que you first understandentender the literalliteral levelnivel,
188
478000
3000
a menos que primero
se entienda el nivel literal,
08:17
so that's why we're talkinghablando literallyliteralmente about breadpan de molde.
189
481000
2000
por eso hemos hablando
del pan de forma literal.
08:19
But let's kindtipo of look at these stagesetapas again
190
483000
2000
Ahora demos una nueva mirada
a estas etapas desde
08:21
from the standpointpunto de vista of connectionsconexiones to possiblyposiblemente a deeperMás adentro levelnivel --
191
485000
4000
el punto de vista de las conexiones para
ojalá llegar a un nivel más profundo,
08:25
all in my questbúsqueda for answeringrespondiendo the questionpregunta,
192
489000
2000
todo en pro de mi búsqueda
por contestar la pregunta:
08:27
"What is it about breadpan de molde that's so specialespecial?"
193
491000
2000
¿qué es lo que hace
al pan tan especial?
08:30
And fulfillingcumpliendo this missionmisión of evokingevocando the fullcompleto potentialpotencial of flavorsabor.
194
494000
4000
Y cumplir con esta misión de
evocar el potencial total del sabor.
08:34
Because what happenssucede is,
195
498000
2000
Porque lo que sucede es que
08:36
breadpan de molde beginscomienza as wheattrigo or any other graingrano.
196
500000
3000
el pan comienza como trigo
o cualquier otro grano.
08:39
But what's wheattrigo? WheatTrigo is a grasscésped
197
503000
2000
¿Pero qué es el trigo?
El trigo es una hierba,
08:41
that growscrece in the fieldcampo.
198
505000
2000
que crece en el campo;
08:43
And, like all grassespastos, at a certaincierto pointpunto it putspone out seedssemillas.
199
507000
3000
y como todas las hierbas,
en cierto punto saca sus semillas
08:47
And we harvestcosecha those seedssemillas, and those are the wheattrigo kernelsgranos.
200
511000
3000
y cosechamos estas semillas
que son la pepita del trigo.
08:50
Now, in orderorden to harvestcosecha it -- I mean, what's harvestingcosecha?
201
514000
2000
Ahora, con objeto de cosecharlas,
me pregunto ¿qué es cosechar?
08:52
It's just a euphemismeufemismo for killingasesinato, right?
202
516000
4000
Es justamente un eufemismo
de matar ¿cierto?
08:56
I mean, that's what's harvestcosecha -- we say we harvestcosecha the pigcerdo, you know?
203
520000
2000
Me explico, eso es cosechar...
decimos que criamos puercos ¿cierto?
08:58
Yes, we slaughtersacrificio, you know. Yes, that's life.
204
522000
3000
Sí, los sacrificamos,
sí, así es la vida.
09:01
We harvestcosecha the wheattrigo,
205
525000
2000
Cosechamos el trigo
09:03
and in harvestingcosecha it, we killmatar it.
206
527000
2000
y al cosecharlo, lo matamos.
09:05
Now, wheattrigo is aliveviva,
207
529000
2000
Pero el trigo está vivo,
09:07
and as we harvestcosecha it, it givesda up its seedssemillas.
208
531000
4000
conforme lo cosechamos,
nos da su semilla
09:11
Now, at leastmenos with seedssemillas we have the potentialpotencial for futurefuturo life.
209
535000
3000
y al menos con las semillas tenemos
el potencial de vida futura.
09:14
We can plantplanta those in the groundsuelo.
210
538000
2000
Las podemos plantar en la tierra
09:16
And we savesalvar some of those for the nextsiguiente generationGeneracion.
211
540000
2000
y guardamos algunas para
la siguiente generación,
09:18
But mostmás of those seedssemillas get crushedaplastada
212
542000
2000
pero la gran mayoría de
esas semillas se muelen
09:20
and turnedconvertido into flourharina.
213
544000
2000
y se convierten en harina;
09:22
And at that pointpunto, the wheattrigo has sufferedsufrió the ultimateúltimo indignityindignidad.
214
546000
3000
en este punto, el trigo ha sufrido
la peor indignación:
09:25
It's not only been killeddelicado,
215
549000
2000
no sólo ha sido asesinada,
09:27
but it's been deniednegado any potentialpotencial for creatingcreando futurefuturo life.
216
551000
3000
sino que se le ha negado
cualquier posibilidad de crear vida futura,
09:30
So we turngiro it into flourharina.
217
554000
3000
la hemos convertido en harina.
09:33
So as I said, I think breadpan de molde is a transformationaltransformacional foodcomida.
218
557000
3000
Como mencioné, creo que el pan
es alimento en transformación,
09:36
The first transformationtransformación -- and, by the way,
219
560000
3000
la primera transformación y, por cierto,
09:39
the definitiondefinición of transformationtransformación for me is
220
563000
2000
la definición de transformación para mí es
09:41
a radicalradical changecambio from one thing into something elsemás.
221
565000
2000
un cambio radical
de una cosa por otra,
09:44
O.K.? RadicalRadical, not subtlesutil.
222
568000
2000
¿de acuerdo? Radical, no sutil.
09:46
Not like hotcaliente wateragua madehecho coldfrío,
223
570000
2000
No como de agua caliente a fría
09:48
or coldfrío wateragua turnedconvertido hotcaliente,
224
572000
2000
o de agua fría a caliente,
09:50
but wateragua boiledhervido off and becomingdevenir steamvapor.
225
574000
3000
sino de agua hervida
que se convierte en vapor;
09:53
That's a transformationtransformación, two differentdiferente things.
226
577000
2000
esa es una transformación,
dos cosas diferentes.
09:55
Well, in this casecaso, the first transformationtransformación
227
579000
2000
Bien, en este caso,
la primera transformación
09:57
is aliveviva to deadmuerto.
228
581000
2000
es de vivo a muerto,
10:00
I'd call that radicalradical.
229
584000
2000
a eso llamaría radical.
10:03
So, we'venosotros tenemos got now this flourharina.
230
587000
3000
Ahora bien, tenemos esta harina,
10:06
And what do we do? We addañadir some wateragua.
231
590000
2000
¿qué hacemos con ella?
Le agregamos agua.
10:08
In stageescenario one, we weighpesar it.
232
592000
2000
En la primera etapa, la pesamos;
10:10
In stageescenario two, we addañadir wateragua and saltsal to it, mixmezcla it togetherjuntos,
233
594000
2000
en la segunda, le incorporamos
agua, sal y los mezclamos
10:12
and we createcrear something that we call "clayarcilla."
234
596000
2000
y creamos lo que llamamos "barro",
10:14
It's like clayarcilla.
235
598000
2000
porque es como el barro.
10:16
And we infuseinfundir that clayarcilla
236
600000
2000
Luego infundimos este barro
10:18
with an ingredientingrediente that we call "leavenlevadura."
237
602000
3000
con un ingrediente
que llamamos fermentador
10:21
In this casecaso, it's yeastlevadura, but yeastlevadura is leavenlevadura. What does leavenlevadura mean?
238
605000
3000
En este caso, la levadura, que es un fermentador
¿qué significa fermentar?
10:24
LeavenLevadura comesproviene from the rootraíz wordpalabra that meansmedio enlivenanimar --
239
608000
3000
Fermentar proviene de la palabra
raíz que significa avivar,
10:28
to vivifyvivificar, to bringtraer to life.
240
612000
2000
vivificar, traer a la vida.
10:32
By the way, what's the Hebrewhebreo wordpalabra for clayarcilla? AdamAdán.
241
616000
4000
Por cierto ¿cuál es la palabra
hebrea para barro? Adán.
10:36

So all these things are determineddeterminado by the bakerpanadero,

En la décima etapa,
lo llevamos al horno,
11:45
It's still doughmasa. NobodyNadie eatscome breadpan de molde doughmasa --

nadie come masa,

11:49
I've metreunió some doughmasa eaterscomedores, but --
273
693000

He conocido algunos

11:51
it's not the staffpersonal of life, right? BreadPan de molde is the staffpersonal of life.
274
695000
4000
esto no es alimento básico ¿correcto?
El pan es alimento básico.
11:55
But doughmasa is what we're workingtrabajando with,
275
699000
2000
Aunque la masa es
con lo que trabajamos,
11:57
and we take that doughmasa to the ovenhorno,
276
701000
2000
la llevamos al horno,
11:59
and it goesva into the ovenhorno. As soonpronto as the interiorinterior temperaturetemperatura of that doughmasa

la metemos al horno y tan pronto
la temperatura interior de la masa
12:03
crossescruces the thresholdlímite of 140 degreesgrados,
278
707000
2000
cruza el umbral de los 140 grados,
12:05
it passespasa what we call the "thermaltérmico deathmuerte pointpunto."
279
709000
3000
se rebasa lo que llamamos
el "punto mortal térmico".
12:10
StudentsEstudiantes love that TDPTDP. They think it's the namenombre of a videovídeo gamejuego.
280
714000
3000
Los estudiantes adoran el PMT,
creen que es el nombre de un juego de video,
12:13
But it's the thermaltérmico deathmuerte pointpunto -- all life ceasescesa there.
281
717000
3000
pero es en el punto mortal térmico
cuando toda forma de vida deja de existir.
12:16

que también es convertir
la masa en pan --
12:26
has to give up its life.
286
730000
2000
debe perder su vida.
12:28
So you see the symbolismsimbolismo at work? It's startingcomenzando to come forthadelante a little bitpoco, you know.
287
732000
3000
¿Ven el simbolismo en movimiento?
Empieza a tomar un poco de sentido...
12:31
It's startingcomenzando to make sensesentido to me --
288
735000
2000
empieza a tener sentido para mí:
12:35
what goesva in is doughmasa,
289
739000
2000
lo que entra es masa,
12:37
what comesproviene out is breadpan de molde --
290
741000
2000
lo que sale es pan;
12:39
or it goesva in aliveviva,
291
743000
2000
lo que entra está vivo,
12:41
comesproviene out deadmuerto.
292
745000
2000
lo que sale está muerto.
12:43
ThirdTercero transformationtransformación. First transformationtransformación, aliveviva to deadmuerto.

segunda transformación,
el muerto vuelve a la vida;
12:50
ThirdTercero transformationtransformación, aliveviva to deadmuerto --
295
754000
2000
tercera transformación,
el vivo muere,
12:52
but doughmasa to breadpan de molde.
296
756000
3000
de masa a pan.
12:55
Or anotherotro analogyanalogía would be,
297
759000
2000
Otra analogía sería
12:57
a caterpillaroruga has been turnedconvertido into a butterflymariposa.
298
761000
3000
un capullo que se convierte en mariposa.
13:00
And it's what comesproviene out of the ovenhorno
299
764000
2000
Y esto es lo que sale del horno,
13:02
that is what we call the staffpersonal of life.
300
766000
3000
esto es lo que llamamos
el alimento básico.
13:05
This is the productproducto
301
769000
2000
Este es el producto
13:07
that
302
771000
3000
que
13:10
everyonetodo el mundo in the worldmundo eatscome, that is so difficultdifícil to give up.
303
774000
4000
todos en el mundo comemos y
nos cuesta trabajo renunciar.
13:14
It's so
304
778000
2000
Está tan
13:16
deeplyprofundamente embeddedincrustado in our psychespsiques that
305
780000
2000
profundamente arraigado
en nuestra psique que
13:19
breadpan de molde is used as a symbolsímbolo for life.
306
783000
3000
el pan se usa como
símbolo de la vida.
13:22
It's used as a symbolsímbolo for transformationtransformación.
307
786000
3000
Se usa como un símbolo de transformación,
13:27
And so, as we get to stageescenario 12 and we partakeparticipar of that,
308
791000
3000
por eso, cuando alcanzamos
la doceava etapa y lo comemos...
13:30
again completingcompletando the life cycleciclo,
309
794000
3000
una vez más completamos
el ciclo de la vida,
13:33
you know, we have a chanceoportunidad to essentiallyesencialmente ingestingerir that --
310
797000
3000
porque tenemos la oportunidad
en esencia de ingerirlo,
13:36
it nurturesnutre us, and we continuecontinuar to carryllevar on
311
800000
3000
nos nutre, nos permite seguir adelante
13:39
and have opportunitiesoportunidades to ponderreflexionar
312
803000
2000
y tenemos oportunidades
para seguir ponderando
13:41
things like this.
313
805000
2000
cosas como estas.
13:43
So this is what I've learnedaprendido from breadpan de molde.
314
807000
2000
Esto es lo que he aprendido del pan,
13:45
This is what breadpan de molde has taughtenseñó me in my journeyviaje.
315
809000
3000
esto es lo que el pan
me ha enseñado en mi trayecto.
13:48
And what we're going to attemptintento to do
316
812000
2000
Y lo que vamos a intentar hacer
13:50
with this breadpan de molde here, again,
317
814000
2000
con este pan aquí, una vez más
13:52
is to use, in additionadición to everything we talkedhabló about,
318
816000
3000
aunado a todo lo que hemos hablado...
13:55
this breadpan de molde we're going to call "spentgastado graingrano breadpan de molde"
319
819000
3000
a este pan lo vamos a llamar
"pan de grano sobrante",
13:58
because, as you know, bread-makingla elaboración del pan is very similarsimilar to beer-makingfabricación de cerveza.
320
822000
3000
porque, han de saber, que elaborar
pan es muy similar a elaborar cerveza.
14:01
BeerCerveza is basicallybásicamente liquidlíquido breadpan de molde,
321
825000
2000
La cerveza es en
principio pan líquido,
14:03
or breadpan de molde is solidsólido beercerveza.
322
827000
2000
o bien el pan es
cerveza sólida.
14:05
And --
323
829000
1000
Y...
14:07
(LaughterRisa)
324
831000
1000
(Risas)
14:08
they -- they're inventedinventado around the samemismo time. I think beercerveza camevino first.
325
832000
3000
fueron inventados alrededor de la misma época,
aunque creo que la cerveza fue primero.
14:11
And the Egyptianegipcio who was tendingtendiendo the beercerveza fellcayó asleepdormido
326
835000
3000
Un egipcio que solía hacer
cerveza se quedó dormido
14:14
in the hotcaliente, Egyptianegipcio sunsol, and it turnedconvertido into breadpan de molde.
327
838000
2000
bajo el caluroso sol egipcio y
entonces la cerveza se hizo pan.
14:16
But we'venosotros tenemos got this breadpan de molde,
328
840000
2000
Tenemos este pan
14:18
and what I did here is to try to, again,
329
842000
2000
y lo que intenté hacer,
una vez más,
14:20
evokeevocar even more flavorsabor from this graingrano,
330
844000
4000
fue extraer más sabor de este grano,
14:24
was we'venosotros tenemos addedadicional into it the spentgastado graingrano from beer-makingfabricación de cerveza.
331
848000
3000
le agregamos grano sobrante obtenido
de la elaboración de cerveza.
14:27
And if you make this breadpan de molde, you can use any kindtipo of spentgastado graingrano from any typetipo of beercerveza.
332
851000
4000
Si haces este pan, puedes usar cualquier tipo
de grano sobrante de cualquier tipo de cerveza;
14:31
I like darkoscuro spentgastado graingrano. TodayHoy we're usingutilizando a lightligero spentgastado graingrano
333
855000
3000
a mí me gusta el grano sobrante oscuro,
hoy estamos usando un grano sobrante ligero
14:34
that's actuallyactualmente from, like, some kindtipo of a lagerlager of some sortordenar --
334
858000
3000
que proviene de cierto tipo de lager, de cierto tipo de
14:37
a lightligero lagerlager or an alecerveza inglesa -- that is wheattrigo and barleycebada that's been toastedtostado.
335
861000
4000
lager ligero o un ale, esto es
trigo y cebada tostados.
14:41
In other wordspalabras, the beer-makercervecero knowssabe alsoademás how to evokeevocar flavorsabor from the grainsgranos
336
865000
3000
En otras palabras, el cervecero también
sabe cómo extraer sabor de los granos
14:44
by usingutilizando sproutingbrotante and maltingmalteado and roastingasado.
337
868000
3000
al germinarlo, maltearlo y tostarlo.
14:47
We're going to take some of that, and put it into the breadpan de molde.
338
871000
2000
Vamos a tomar algo de eso
y lo vamos a meter al pan.
14:49
So now we not only have a high-fiberalto contenido de fibra breadpan de molde,
339
873000
3000
Entonces ahora tenemos
no sólo un pan con mucha fibra,
14:52
but now fiberfibra on topparte superior of fiberfibra.
340
876000
2000
sino fibra encima de fibra.
14:54
And so this is, again, hopefullyOjalá
341
878000
3000
Entonces esto es, esperemos,
14:57
not only a healthysaludable breadpan de molde,
342
881000
2000
no sólo un pan saludable,
14:59
but a breadpan de molde that you will enjoydisfrutar.
343
883000
2000
sino uno que disfrutarán.
15:01
So, if I, kindtipo of, breakdescanso this breadpan de molde,
344
885000
3000
Así pues, como que
partimos este pan,
15:04
maybe we can sharecompartir this now a little bitpoco here.
345
888000
3000
quizá podamos compartirlo
ahora, un poco aquí,
15:07
We'llBien startcomienzo a little piecepieza here,
346
891000
2000
un pequeño pedazo por acá,
15:09
and I'm going to take a little piecepieza here --
347
893000
2000
y voy a tomar un pedazo yo,
15:11
I think I'd better tastegusto it myselfmí mismo before you have it at lunchalmuerzo.
348
895000
3000
creo que mejor lo pruebo antes
que ustedes en la comida.
15:14
I'll leavesalir you
349
898000
2000
Los dejo
15:17
with what I call the baker'spanadería blessingbendición.
350
901000
2000
con lo que llamamos
la bendición del panadero:
15:19
MayMayo your crustcorteza be crispcrujiente,
351
903000
2000
"Que tu corteza sea crujiente
15:21
and your breadpan de molde always risesubir.
352
905000
2000
y que tu pan siempre suba".
15:24
Thank you.

ABOUT THE SPEAKER
Peter Reinhart - Baker

Why you should listen

Peter Reinhart's food work began as ministry outreach and later became a full-fledged culinary and teaching career. Both an educator and lay minister, his lessons focus on both secular and spiritual education. One of his books, Bread Upon the Waters: A Pilgrimage Toward Self Discovery and Spiritual Truth is first in a series of books exploring nourishment in terms of food and one's life mission.

Reinhart is founder of the award-winning Brother Juniper's Bakery in Santa Rosa, California. He's now a full-time faculty member in the International Baking and Pastry Institute at Johnson and Wales University. He has also developed a line of frozen gourmet pizzas, calzones, toaster snacks and bagels for Amy's Kitchen.

His latest book is Peter Reinhart's Whole Grain Breads: New Techniques, Extraordinary Flavor.
