Why you should listen

Biophysicist Luca Turin studies the science of smell. He's a leading proponent of the vibrational theory of smell -- the idea that when our noses pick up a scent, we're reacting to the vibrational properties of the molecule we're smelling. (This is in opposition to the shape theory of smell, which imagines smelly molecules fitting into conveniently shaped receptors in our noses.)

His work on olfactory reception and the prediction of what a particular molecule will smell like has led to an interesting line of work: designing new fragrances and flavor molecules, as part of the firm Flexitral, where he is CTO. Coming up, he'll be part of a team in Biomedical Engineering at MIT, headed by Professor Shuguang Zhang, to develop an artificial nose made with natural receptors as part of DARPA's just-launched RealNose program.

He's the author of several books on scent, including Perfumes: The Guide and The Secret of Scent, and is the subject of Chandler Burr's 2003 book The Emperor of Scent.

00:16
It’s a fragrancegeur calledriep BeyondBuiten ParadiseParadise,

3000
Het parfum heet Beyond Paradise

00:22
ExceptBehalve here it’s been splitspleet up in partsonderdelen by EstEstée LauderLauder

00:26
and by the perfumerparfumeur who did it, CaliceCalice BeckerBecker,

3000
en door de parfumeur, Calice Becker,
00:29
and I'm mostmeest gratefuldankbaar to them for this.
5
17000
1000
00:30
And it’s been splitspleet up in successiveopeenvolgende bitsstukjes and a chordkoorde.
6
18000
4000
00:34
So what you’reRe smellingruiken now is the toptop noteNotitie.
7
22000
2000
Wat je nu ruikt, is de hoofdgeur.
00:36
And then will come what they call the hearthart-, the lushweelderige hearthart- noteNotitie.
8
24000
4000
Daarna komt de zogenaamde weelderige hartgeur.
00:40
I will showtonen it to you.
9
28000
3000
Ik zal het even laten zien.
00:43
The EdenEden toptop noteNotitie is namedgenaamd after the EdenEden ProjectProject in the U.K.
10
31000
3000
00:46
The lushweelderige hearthart- noteNotitie, MelaleucaMelaleuca barkschors noteNotitie -- whichwelke does not containbevatten any MelaleucaMelaleuca barkschors,
11
34000
5000
00:51
because it’s totallyhelemaal forbiddenverboden.
12
39000
3000
want dat is verboden.
00:54
And after that, the completecompleet fragrancegeur.
13
42000
3000
En daarna de volledige geur.
00:57
Now what you are smellingruiken is a combinationcombinatie of --
14
45000
3000
01:00
I askedgevraagd how manyveel moleculesmoleculen there were in there, and nobodyniemand would tell me.
15
48000
4000
01:04
So I put it throughdoor a G.C., a GasGas ChromatographChromatograaf that I have in my officekantoor,
16
52000
5000
01:09
and it’s about 400.
17
57000
3000
en het zijn er ongeveer 400.
01:12
So what you’reRe smellingruiken is severalverscheidene hundredhonderd moleculesmoleculen
18
60000
3000
01:15
floatingdrijvend throughdoor the airlucht, hittingraken your noseneus-.
19
63000
3000
01:18
And do not get the impressionindruk that this is very subjectivesubjectief.
20
66000
4000
01:22
You are all smellingruiken prettymooi much the samedezelfde thing, OK?
21
70000
4000
Jullie ruiken nu allemaal ongeveer hetzelfde.
01:26
SmellGeur has this reputationreputatie of beingwezen somewhatenigszins differentverschillend for eachelk personpersoon.
22
74000
4000
01:30
It’s not really truewaar.
23
78000
1000
Dat is niet echt waar.
01:31
And perfumeryparfumerie showsshows you that can’t be truewaar,
24
79000
2000
01:33
because if it were like that it wouldnzou’t be an artkunst, OK?
25
81000
6000
anders zou het geen kunst zijn.
01:39
Now, while the smellgeur waftswafts over you, let me tell you the historygeschiedenis of an ideaidee.
26
87000
4000
01:43
Everything that you’reRe smellingruiken in here
27
91000
4000
Alles wat je hier ruikt,
01:47
is madegemaakt up of atomsatomen that come from what I call

You really donDon’t want to leavehet verlof it if you want to have a careercarrière in perfumeryparfumerie.
31
104000
3000
01:59
Some people have triedbeproefd in the 1920s
32
107000
2000
Sommigen hebben in de jaren '20 geprobeerd
02:01
to addtoevoegen things from the badslecht partsonderdelen, and it didndidn’t really work.
33
109000
4000
02:05
These are the fivevijf atomsatomen from whichwelke just about everything
34
113000
2000
Dit zijn de 5 atomen waaruit alles
02:07
that you’reRe going to smellgeur in realecht life, from coffeekoffie to fragrancegeur, are madegemaakt of.
35
115000
6000
02:13
The toptop noteNotitie that you smelledrook at the very beginningbegin,
36
121000
2000
02:15
the cut-grassgemaaid gras greengroen, what we call in perfumeryparfumerie -- they’reRe weirdvreemd termstermen --
37
123000
4000
gemaaid gras zoals we dat noemen -- gekke termen hier --
02:19
and this would be calledriep a greengroen noteNotitie,
38
127000
2000
en dit heet dan een groene geur,
02:21
because it smellsgeuren of something greengroen, like cutbesnoeiing grassgras.
39
129000
2000
02:23
This is cis-CIS-3-hexene--Hexeen-1-ol-ol. And I had to learnleren chemistrychemie on the flyvlieg
40
131000
7000
Dit is cis-3-hexenol. Ik heb de afgelopen 3 jaar
02:30
in the last threedrie yearsjaar. A very expensiveduur highhoog schoolschool- chemistrychemie educationonderwijs.
41
138000
6000
02:36
This has sixzes carbonkoolstof atomsatomen, so "hexaHexa," hexene-Hexe-1-ol-ol.
42
144000
4000
Deze heeft 6 koolstofatomen, dus 'hex': hexenol.
02:40
It has one doubledubbele bondobligatie, it has an alcoholalcohol on the endeinde,
43
148000
4000
02:44
so it’s "olOL," and that’s why they call it cis-CIS-3-hexene--Hexeen-1-ol-ol.
44
152000
3000
'ol' dus, en daarom heet het cis-3-hexenol.
02:47
OnceEenmaal you figurefiguur this out, you can really impressindruk maken people at partiespartijen.
45
155000
3000
02:50
This smellsgeuren of cutbesnoeiing grassgras. Now, this is the skeletonskelet of the moleculemolecuul.
46
158000
4000
Dit ruikt naar gemaaid gras. Dit is het skelet van de molecule.
02:54
If you dressjurk it up with atomsatomen, hydrogenwaterstof atomsatomen --
47
162000
3000
Als je er waterstofatomen aanhangt,
02:57
that’s what it lookslooks like when you have it on your computercomputer --
48
165000
2000
02:59
but actuallywerkelijk it’s sortsoort of more like this, in the sensezin that the atomsatomen have a certainzeker
49
167000
4000
03:03
spheregebied that you cannotkan niet penetratedoordringen. They repelweren.
50
171000
3000
03:06
OK, now. Why does this thing smellgeur of cutbesnoeiing grassgras, OK?
51
174000
6000
Waarom ruikt dit nu naar gras?
03:12
Why doesndoesn’t it smellgeur of potatoesaardappelen or violetsviooltjes? Well, there are really two theoriestheorieën.
52
180000
6000
03:18
But the first theorytheorie is: it mustmoet be the shapevorm.
53
186000
4000
03:22
And that’s a perfectlyvolmaakt reasonableredelijk theorytheorie in the sensezin that
54
190000
2000
Die theorie is heel aannemelijk
03:24
almostbijna everything elseanders in biologybiologie workswerken by shapevorm.
55
192000
2000
03:26
EnzymesEnzymen that chewkauwen things up, antibodiesantilichamen, it’s all, you know,
56
194000
4000
Enzymen die dingen opeten, antilichamen,
03:30
the fitpassen betweentussen a proteineiwit and whateverwat dan ook it is grabbinggrijpen, in this casegeval a smellgeur.
57
198000
6000
03:36
And I will try and explainuitleg geven to you what’s wrongfout with this notionbegrip.
58
204000
3000
03:39
And the other theorytheorie is that we smellgeur molecularmoleculair vibrationstrillingen.
59
207000
3000
Volgens de andere theorie ruiken we moleculaire vibraties.
03:42
Now, this is a totallyhelemaal insanekrankzinnig ideaidee.
60
210000
2000
Dat is echt een waanzinnig idee.
03:44
And when I first camekwam acrossaan de overkant it in the earlyvroeg '90s, I thought my predecessorvoorganger,
61
212000
4000
03:48
MalcolmMalcolm DysonDyson and BobBob WrightWright, had really takeningenomen leavehet verlof of theirhun sensesverstand,
62
216000
3000
03:51
and I’llll explainuitleg geven to you why this was the casegeval.
63
219000
3000
03:54
HoweverEchter, I camekwam to realizerealiseren graduallygeleidelijk that they maymei be right --
64
222000
3000
03:57
and I have to convinceovertuigen all my colleaguescollega's that this is so, but I’m workingwerkend on it.
65
225000
3000
04:00
Here’s how shapevorm workswerken in normalnormaal receptorsreceptoren.
66
228000
6000
Zo werkt de vorm bij normale receptoren.
04:06
You have a moleculemolecuul comingkomt eraan in, it getskrijgt into the proteineiwit, whichwelke is schematicschematisch here,
67
234000
5000
04:11
and it causesoorzaken this thing to switchschakelaar, to turnbeurt, to moveverhuizing in some way
68
239000
5000
en daardoor gaat die draaien of bewegen
04:16
by bindingbindende in certainzeker partsonderdelen.
69
244000
4000
door bepaalde delen te verbinden.
04:20
And the attractionaantrekkelijkheid, the forceskrachten, betweentussen the moleculemolecuul and the proteineiwit
70
248000
2000
04:22
causeoorzaak the motionbeweging. This is a shape-basedop basis van vorm ideaidee.
71
250000
5000
zorgen voor de beweging. Dit idee is gebaseerd op vorm.
04:27
Now, what’s wrongfout with shapevorm is summarizedsamengevat in this slideglijbaan.
72
255000
4000
04:31
The way --I--Ik expectverwachten everybodyiedereen to memorizememoriseren these compoundsverbindingen.
73
259000
5000
04:36
This is one pagepagina of work from a chemistscheikundige’s workbookwerkmap, OK?
74
264000
5000
04:41
WorkingWerken for a fragrancegeur companybedrijf.
75
269000
2000
Hij werkt voor een parfumbedrijf.
04:43
He’s makingmaking 45 moleculesmoleculen, and he’s looking for a sandalwoodsandelhout,
76
271000
3000
Hij maakt 45 moleculen en hij zoekt sandelhout,
04:46
something that smellsgeuren of sandalwoodsandelhout.
77
274000
1000
iets wat ruikt naar sandelhout.
04:47
Because there’s a lot of moneygeld in sandalwoodssandalwoods.
78
275000
2000
04:49
And of these 45 moleculesmoleculen, only 4629 actuallywerkelijk smellsgeuren of sandalwoodsandelhout.
79
277000
7000
04:56
And he putsputs an exclamationuitroepteken markMark, OK? This is an awfulafschuwelijk lot of work.
80
284000
3000
Met een uitroepteken. Dat is echt verschrikkelijk veel werk.
04:59
This actuallywerkelijk is roughlyongeveer, in man-yearsmensjaren of work, 200,000 dollarsdollars roughlyongeveer,
81
287000
5000
05:04
if you keep them on the lowlaag salariessalarissen with no benefitsvoordelen.
82
292000
4000
05:08
So this is a profoundlydiep inefficientinefficiënt processwerkwijze.
83
296000
2000
Het is dus een erg inefficiënt proces.
05:10
And my definitiondefinitie of a theorytheorie is, it’s not just something
84
298000
3000
05:13
that you teachonderwijzen people; it’s laborarbeid savingbesparing.
85
301000
2000
05:15
A theorytheorie is something that enablesstelt you to do lessminder work.
86
303000
3000
Een theorie moet voor minder werk zorgen.
05:18
I love the ideaidee of doing lessminder work. So let me explainuitleg geven to you why -- a very simpleeenvoudig factfeit
87
306000
6000
05:24
that tellsvertelt you why this shapevorm theorytheorie really does not work very well.
88
312000
5000
05:29
This is cis-CIS-3-hexene--Hexeen-1-ol-ol. It smellsgeuren of cutbesnoeiing grassgras.
89
317000
5000
Dit is cis-3-hexenol. Het ruikt naar gemaaid gras.
05:34
This is cis-CIS-3-hexene--Hexeen-1-thiol-thiol, and this smellsgeuren of rottenrotte eggseieren, OK?
90
322000
7000
05:41
Now, you will have noticedmerkte that vodkawodka never smellsgeuren of rottenrotte eggseieren.
91
329000
5000
05:46
If it does, you put the glassglas down, you go to a differentverschillend barbar.
92
334000
4000
05:50
This is -- in other wordstekst, we never get the O-HO-H --
93
338000
5000
We kunnen met andere woorden nooit
05:55
we never mistakevergissing it for an S-HS-H, OK?
94
343000
3000
05:58
Like, at no concentrationconcentratie, even purezuiver, you know,
95
346000
3000
Zelfs ongeconcentreerd en puur
06:01
if you smeltSpieringen purezuiver ethanolethanol, it doesndoesn’t smellgeur of rottenrotte eggseieren.
96
349000
3000
ruikt zuivere ethanol niet naar rotte eieren.
06:04
ConverselyOmgekeerd, there is no concentrationconcentratie at whichwelke the sulfurzwavel compoundsamenstelling will smellgeur like vodkawodka.
97
352000
7000
06:11
It’s very hardhard to explainuitleg geven this by molecularmoleculair recognitionerkenning.
98
359000
4000
06:15
Now, I showedtoonden this to a physicistnatuurkundige friendvriend of minede mijne who has a profounddiepgaand distasteafkeer
99
363000
2000
06:17
for biologybiologie, and he sayszegt, "That’s easygemakkelijk! The things are a differentverschillend colorkleur!"
100
365000
4000
06:21
(LaughterGelach)
101
369000
5000
(Gelach)
06:26
We have to go a little beyondvoorbij that. Now let me explainuitleg geven why vibrationalvibrationele theorytheorie has
102
374000
5000
06:31
some sortsoort of interestinteresseren in it. These moleculesmoleculen, as you saw in the beginningbegin,
103
379000
4000
06:35
the buildinggebouw blocksblokken had springsveren connectingverbinden them to eachelk other.
104
383000
2000
deze bouwstenen, met elkaar verbonden.
06:37
In factfeit, moleculesmoleculen are ablein staat to vibratetrillen at a setreeks of frequenciesfrequenties
105
385000
3000
Moleculen kunnen vibreren op verschillende frequenties
06:40
whichwelke are very specificspecifiek for eachelk moleculemolecuul and for the bondsobligaties connectingverbinden them.
106
388000
4000
06:44
So this is the soundgeluid of the O-HO-H stretchrekken, translatedvertaalde into the audiblehoorbaar rangereeks.
107
392000
8000
06:53
S-HS-H, quiteheel a differentverschillend frequencyfrequentie.
108
401000
2000
S-H heeft een heel andere frequentie.
06:55
Now, this is kindsoort of interestinginteressant, because it tellsvertelt you
109
403000
4000
Dat is wel interessant,
06:59
that you should be looking for a particularbijzonder factfeit, whichwelke is this:
110
407000
3000
want daardoor weet je
07:02
nothing in the worldwereld- smellsgeuren like rottenrotte eggseieren exceptbehalve S-HS-H, OK?
111
410000
4000
07:06
Now, FactFeit B: nothing in the worldwereld- has that frequencyfrequentie exceptbehalve S-HS-H.

07:13
If you look on this, imaginestel je voor a pianopiano keyboardtoetsenbord.
113
421000
2000
07:15
The S-HS-H stretchrekken is in the middlemidden- of a partdeel of the keyboardtoetsenbord
114
423000
4000
07:19
that has been, so to speakspreken, damagedbeschadigde,
115
427000
2000
dat zogezegd stuk is,
07:21
and there are no neighboringnaburig notesaantekeningen, nothing is closedichtbij to it.
116
429000
3000
07:24
You have a uniqueuniek smellgeur, a uniqueuniek vibrationvibratie.
117
432000
2000
07:26
So I wentgegaan searchingzoeken when I startedbegonnen in this gamespel
118
434000
2000
07:28
to convinceovertuigen myselfmezelf that there was any degreemate of plausibilitygeloofwaardigheid
119
436000
3000
07:31
to this wholegeheel crazygek storyverhaal.
120
439000
2000
misschien toch waar kon zijn.
07:33
I wentgegaan searchingzoeken for a typetype of moleculemolecuul, any moleculemolecuul,
121
441000
3000
07:36
that would have that vibrationvibratie and that -- the obviousduidelijk predictionvoorspelling
122
444000
5000
die dezelfde vibratie had. De voor de hand liggende voorspelling
07:41
was that it should absolutelyAbsoluut smellgeur of sulfurzwavel.
123
449000
2000
07:43
If it didndidn’t, the wholegeheel ideaidee was toastToast, and I mightmacht as well moveverhuizing on to other things.
124
451000
6000
07:49
Now, after searchingzoeken highhoog and lowlaag for severalverscheidene monthsmaanden,
125
457000
4000
07:53
I discoveredontdekt that there was a typetype of moleculemolecuul calledriep a BoraneBoraan
126
461000
5000
ontdekte ik een soort molecule, een boraan
07:58
whichwelke has exactlyprecies the samedezelfde vibrationvibratie.
127
466000
2000
en die had exact dezelfde vibratie.
08:00
Now the good newsnieuws is, BoranesBoranen you can get holdhouden of.
128
468000
3000
08:03
The badslecht newsnieuws is they’reRe rocketraket fuelsbrandstoffen.
129
471000
3000
08:06
MostDe meeste of them explodeontploffen spontaneouslyspontaan in contactcontact with airlucht,
130
474000
3000
08:09
and when you call up the companiesbedrijven, they only give you minimumminimum tentien tonstons, OK?
131
477000
4000
08:13
(LaughterGelach)
132
481000
3000
(Gelach)
08:16
So this was not what they call a laboratory-scalelaboratoriumschaal experimentexperiment,
133
484000
3000
Dit was dus geen kleinschalig experiment
08:19
and they wouldnzou’t have likedvond it at my collegecollege.
134
487000
2000
08:21
HoweverEchter, I managedbeheerd to get a holdhouden of a BoraneBoraan eventuallytenslotte, and here is the beastbeest.
135
489000
8000
08:29
And it really does have the samedezelfde -- if you calculateberekenen,
136
497000
2000
Als je de vibratiefrequenties meet en berekent,
08:31
if you measuremaatregel the vibrationalvibrationele frequenciesfrequenties, they are the samedezelfde as S-HS-H.
137
499000
4000
zijn die hetzelfde als bij S-H.
08:35
Now, does it smellgeur of sulfurzwavel? Well, if you go back in the literatureliteratuur,
138
503000
5000
En ruikt dat nu naar zwavel? Als je even in de literatuur duikt,
08:40
there’s a man who knewwist more about BoranesBoranen than anyoneiedereen
139
508000
3000
08:43
alivelevend then or sincesinds, AlfredAlfred StockVoorraad, he synthesizedgesynthetiseerd all of them.
140
511000
5000
toen of later. Alfred Stock synthetiseerde ze allemaal.
08:48
And in an enormousenorm 40-page-pagina paperpapier in GermanDuits he sayszegt, at one pointpunt --
141
516000
6000
08:54
my wifevrouw is GermanDuits and she translatedvertaalde it for me --
142
522000
3000
08:57
and at one pointpunt he sayszegt, "ganzganz widerlichwiderlich GeruchGeruch,"
143
525000
2000
08:59
an "absolutelyAbsoluut repulsiveafstotend smellgeur," whichwelke is good. ReminiscentDenken of hydrogenwaterstof sulfidesulfide.
144
527000
6000
09:05
So this factfeit that BoranesBoranen smellgeur of sulfurzwavel
145
533000
3000
Het feit dat boranen naar zwavel ruiken,
09:08
had been knownbekend sincesinds 1910, and utterlyvolkomen forgottenvergeten untiltot 1997, 1998.
146
536000
7000
09:15
Now, the slightgering flyvlieg in the ointmentzalf is this: that
147
543000
4000
09:19
if we smellgeur molecularmoleculair vibrationstrillingen, we mustmoet have a spectroscopespectroscoop in our noseneus-.
148
547000
5000
09:24
Now, this is a spectroscopespectroscoop, OK, on my laboratorylaboratorium benchbank.
149
552000
5000
Dit is een spectroscoop, op mijn werkbank.
09:29
And it’s faireerlijk to say that if you look up somebodyiemand’s noseneus-,
150
557000
2000
Als je nu in iemands neus kijkt,
09:31
you’reRe unlikelyonwaarschijnlijk to see anything resemblinglijkend op this.
151
559000
3000
09:34
And this is the mainhoofd objectionbezwaar to the theorytheorie.
152
562000
2000
09:36
OK, great, we smellgeur vibrationstrillingen. How? All right?
153
564000
5000
Oké, we ruiken vibraties. Maar hoe?
09:41
Now when people askvragen this kindsoort of questionvraag, they neglectverwaarlozing something,
154
569000
2000
09:43
whichwelke is that physicistsnatuurkundigen are really cleverknap, unlikeanders biologistsbiologen.
155
571000
4000
09:47
(LaughterGelach)
156
575000
3000
(Gelach)
09:50
This is a jokegrap. I’m a biologistbioloog, OK?
157
578000
2000
Grapje. Ik ben bioloog.
09:52
So it’s a jokegrap againsttegen myselfmezelf.
158
580000
1000
09:53
BobBob JacklovichJacklovich and JohnJohn LambLam at FordFord MotorMotor CompanyBedrijf,

2000
09:58
on fundamentalfundamenteel researchOnderzoek, discoveredontdekt a way
161
586000
4000
aan wetenschappelijk onderzoek, een manier
10:02
to buildbouwen a spectroscopespectroscoop that was intrinsicallyintrinsiek nano-scalenano-schaal.
162
590000
4000
10:06
In other wordstekst, no mirrorsspiegels, no laserslasers, no prismsprisma 's, no nonsenseonzin,
163
594000
3000
10:09
just a tinyklein deviceapparaat, and he builtgebouwd this deviceapparaat. And this deviceapparaat usestoepassingen electronelektron tunnelingTunneling.
164
597000
5000
slechts een klein apparaat. En dat apparaat werkt met het tunneleffect.
10:14
Now, I could do the dancedans of electronelektron tunnelingTunneling,
165
602000
3000
Ik zou het tunneleffect kunnen voordoen,
10:17
but I’veve donegedaan a videovideo- insteadin plaats daarvan, whichwelke is much more interestinginteressant. Here’s how it workswerken.
166
605000
5000
10:22
ElectronsElektronen are fuzzyfuzzy creaturesschepsels, and they can jumpspringen acrossaan de overkant gapshiaten,
167
610000
4000
10:26
but only at equalGelijk energyenergie. If the energyenergie differsverschilt, they can’t jumpspringen.
168
614000
5000
10:31
UnlikeIn tegenstelling tot us, they wonwon’t fallvallen off the cliffCliff.
169
619000
2000
Ze vallen niet naar beneden, zoals wij.
10:33
OK. Now. If something absorbsabsorbeert the energyenergie, the electronelektron can travelreizen.
170
621000
7000
10:40
So here you have a systemsysteem, you have something --
171
628000
3000
Dit systeem zorgt ervoor --
10:43
and there’s plentyovervloed of that stuffspul in biologybiologie --
172
631000
1000
10:44
some substancestof givinggeven an electronelektron, and the electronelektron triesprobeert to jumpspringen,
173
632000
5000
10:49
and only when a moleculemolecuul comeskomt alonglangs that has the right vibrationvibratie
174
637000
4000
10:53
does the reactionreactie happengebeuren, OK?
175
641000
2000
heeft de reactie plaats.
10:55
This is the basisbasis for the deviceapparaat that these two guys at FordFord builtgebouwd.
176
643000
4000
10:59
And everyelk singlesingle partdeel of this mechanismmechanisme is actuallywerkelijk plausibleplausibel in biologybiologie.
177
647000
7000
11:06
In other wordstekst, I’veve takeningenomen off-the-shelfoff-the-shelf componentscomponenten,
178
654000
1000
Met andere woorden, met kant-en-klare onderdelen
11:07
and I’veve madegemaakt a spectroscopespectroscoop.
179
655000
2000
kan ik een spectroscoop maken.
11:09
What’s niceleuk about this ideaidee, if you have a philosophicalfilosofisch bentgebogen of mindgeest,
180
657000
4000
11:13
is that then it tellsvertelt you that the noseneus-,
181
661000
2000
dat je dan begrijpt dat de neus,
11:15
the earoor and the eyeoog are all vibrationalvibrationele sensesverstand.
182
663000
3000
11:18
Of courseCursus, it doesndoesn’t matterer toe doen, because it could alsoook be that they’reRe not.
183
666000
4000
11:22
But it has a certainzeker --
184
670000
1000
Maar het klinkt wel --
11:23
(LaughterGelach)
185
671000
2000
(Gelach)
11:25
-- it has a certainzeker ringring to it whichwelke is attractiveaantrekkelijk to people
186
673000
4000
11:29
who readlezen too much 19th-centuryth-eeuwse GermanDuits literatureliteratuur.
187
677000
4000
die te veel 19de-eeuwse Duitse literatuur lezen.
11:33
And then a magnificentprachtig thing happenedgebeurd:
188
681000
1000
En toen gebeurde er iets fantastisch:
11:34
I left academiaacademische wereld and joinedtoegetreden the realecht worldwereld- of businessbedrijf,
189
682000
6000
11:40
and a companybedrijf was createdaangemaakt around my ideasideeën
190
688000
3000
11:43
to make newnieuwe moleculesmoleculen usinggebruik makend van my methodmethode,
191
691000
3000
11:46
alonglangs the lineslijnen of, let’s put someoneiemand elseanders’s moneygeld where your mouthmond is.
192
694000
4000
11:50
And one of the first things that happenedgebeurd was
193
698000
4000
11:54
we startedbegonnen going around to fragrancegeur companiesbedrijven
194
702000
2000
was langsgaan bij parfumbedrijven
11:56
askingvragen for what they needednodig, because, of courseCursus,
195
704000
4000
12:00
if you could calculateberekenen smellgeur, you donDon’t need chemistschemici.
196
708000
2000
heb je geen scheikundigen meer nodig.
12:02
You need a computercomputer, a MacMac will do it, if you know how to programprogramma the thing right,
197
710000
4000
12:06
OK? So you can try a thousandduizend moleculesmoleculen,
198
714000
4000
Dan kun je duizend moleculen proberen,
12:10
you can try tentien thousandduizend moleculesmoleculen in a weekendweekend,
199
718000
3000
zelfs tienduizend moleculen in een weekend,
12:13
and then you only tell the chemistschemici to make the right one.
200
721000
3000
12:16
And so that’s a directdirect pathpad to makingmaking newnieuwe odorantsreukstoffen.
201
724000
4000
12:20
And one of the first things that happenedgebeurd was
202
728000
1000
Het eerste wat er gebeurde
12:21
we wentgegaan to see some perfumersparfumeurs in FranceFrankrijk --
203
729000
2000
toen we naar parfumeurs in Frankrijk gingen --
12:23
and here’s where I do my CharlesCharles FleischerFleischer impressionindruk --
204
731000
2000
nu komt mijn Charles Fleischer-imitatie --
12:25
and one of them sayszegt, "You cannotkan niet make a coumarincumarine."
205
733000
4000
12:29
He sayszegt to me, "I betinzet you cannotkan niet make a coumarincumarine."
206
737000
3000
12:32
Now, coumarincumarine is a very commongemeenschappelijk thing, a materialmateriaal,
207
740000
4000
Coumarine is een heel gebruikelijke stof
12:36
in fragrancegeur whichwelke is derivedafgeleide from a beanBoon that comeskomt from SouthSouth AmericaAmerika.
208
744000
3000
in parfums.
12:39
And it is the classicklassiek syntheticsynthetisch aromaaroma chemicalchemisch, OK?
209
747000
4000
12:43
It’s the moleculemolecuul that has madegemaakt menmannen’s fragrancesgeuren
210
751000
4000
Het is de molecule waardoor mannenparfums
12:47
smellgeur the way they do sincesinds 1881, to be exactexact.
211
755000
3000
12:50
And the problemprobleem is it’s a carcinogencarcinogeen.
212
758000
3000
Het probleem is dat het kankerverwekkend is.
12:53
So nobodyniemand likessympathieën particularlyvooral to -- you know, aftershaveAftershave with carcinogenskankerverwekkende stoffen.
213
761000
6000
En niemand heeft graag een kankerverwekkende aftershave.
12:59
(LaughterGelach)
214
767000
2000
(Gelach)
13:01
There are some recklessroekeloos people, but it’s not worthwaard it, OK?
215
769000
3000
13:04
So they askedgevraagd us to make a newnieuwe coumarincumarine. And so we startedbegonnen doing calculationsberekeningen.
216
772000
5000
13:09
And the first thing you do is you calculateberekenen the vibrationalvibrationele spectrumspectrum
217
777000
3000
Eerst bereken je het vibratiespectrum van coumarine,
13:12
of coumarincumarine, and you smoothglad it out,
218
780000
1000
en dan vlak je het uit
13:13
so that you have a niceleuk pictureafbeelding of what the sortsoort of chordkoorde, so to speakspreken, of coumarincumarine is.
219
781000
6000
13:19
And then you startbegin crankingzwengelen the computercomputer to find other moleculesmoleculen,
220
787000
6000
13:25
relatedverwant or unrelatedniet verwant, that have the samedezelfde vibrationstrillingen.
221
793000
3000
13:28
And we actuallywerkelijk, in this casegeval, I’m sorry to say,
222
796000
4000
13:32
it happenedgebeurd -- it was serendipitousserendipitous.
223
800000
2000
het was echt puur toeval.
13:34
Because I got a phonetelefoon call from our chiefchef chemistscheikundige
224
802000
3000
Ik kreeg een telefoontje van de hoofdchemicus
13:37
and he said, look, I’veve just foundgevonden this suchzodanig a beautifulmooi reactionreactie,
225
805000
5000
13:42
that even if this compoundsamenstelling doesndoesn’t smellgeur of coumarincumarine,
226
810000
1000
zelfs als het niet ruikt naar coumarine
13:43
I want to do it, it’s just suchzodanig a niftyhandige,
227
811000
3000
13:46
one stepstap -- I mean, chemistschemici have weirdvreemd mindsgeesten --
228
814000
3000
één stap -- scheikundigen hebben rare kronkels --
13:49
one stepstap, 90 percentprocent yieldopbrengst, you know, and you get this lovelyheerlijk
229
817000
4000
13:53
crystallinekristallijne compoundsamenstelling. Let us try it.
230
821000
2000
een prachtige kristallijne stof. Laten we het proberen."
13:55
And I said, first of all, let me do the calculationberekening on that compoundsamenstelling, bottombodem right,
231
823000
4000
13:59
whichwelke is relatedverwant to coumarincumarine, but has an extraextra pentagonPentagon insertedingevoegd into the moleculemolecuul.
232
827000
6000
14:05
CalculateBerekenen the vibrationstrillingen, the purplePurper spectrumspectrum is that newnieuwe fellowkameraad,
233

ABOUT THE SPEAKER
Luca Turin - Nose
Biophysicist Luca Turin studies the science of smell. He's the author of Perfumes: The Guide, and the subject of Chandler Burr's 2003 book The Emperor of Scent. His next project: developing an artificial nose.
