ABOUT THE SPEAKER
Dan Barber - Chef
Dan Barber is a chef and a scholar -- relentlessly pursuing the stories and reasons behind the foods we grow and eat.

Why you should listen

Dan Barber is the chef at New York's Blue Hill restaurant, and Blue Hill at Stone Barns in Westchester, where he practices a kind of close-to-the-land cooking married to agriculture and stewardship of the earth. As described on Chez Pim: "Stone Barns is only 45 minutes from Manhattan, but it might as well be a whole different universe. A model of self-sufficiency and environmental responsibility, Stone Barns is a working farm, ranch, and a three-Michelin-star-worthy restaurant." It's a vision of a new kind of food chain.

Barber's philosophy of food focuses on pleasure and thoughtful conservation -- on knowing where the food on your plate comes from and the unseen forces that drive what we eat. He's written on US agricultural policies, asking for a new vision that does not throw the food chain out of balance by subsidizing certain crops at the expense of more appropriate ones.

In 2009, Barber received the James Beard award for America's Outstanding Chef, and was named one of the world's most influential people in Time’s annual "Time 100" list. In 2014 he published The Third Plate: Field Notes on the Future of Food.

So, I've known a lot of fish in my life.
0
1000
4000
Bem, conheci muitos peixes em minha vida.
00:20
I've loved only two.
1
5000
3000
Amei apenas dois.
00:23
That first one,
2
8000
2000
O primeiro,
00:25
it was more like a passionate affair.
3
10000
3000
foi mais como um affair apaixonado.
00:28
It was a beautiful fish:
4
13000
2000
Era um belo peixe,
00:30
flavorful, textured, meaty,
5
15000
3000
saboroso, de boa textura, carnudo,
00:33
a bestseller on the menu.
6
18000
2000
um sucesso do menu.
00:35
What a fish.
7
20000
2000
Que peixe.
00:37
(Laughter)
8
22000
3000
(Risos)
00:40
Even better,
9
25000
2000
Melhor ainda,
00:42
it was farm-raised to the supposed highest standards
10
27000
3000
ele era criado através de supostos altos padrões
00:45
of sustainability.
11
30000
3000
de sustentabilidade.
00:48
So you could feel good about selling it.
12
33000
3000
Então me sentia bem ao vendê-lo.
00:52
I was in a relationship with this beauty
13
37000
2000
Eu estava em um relacionamento com esta beleza
00:54
for several months.
14
39000
2000
durante muitos meses.
00:58
One day, the head of the company called
15
43000
2000
Um dia, um chefe da empresa me ligou
01:00
and asked if I'd speak at an event
16
45000
2000
e perguntou se eu falaria em um evento
01:02
about the farm's sustainability.
17
47000
2000
sobre a sustentabilidade da criação.
01:04
"Absolutely," I said.
18
49000
2000
"Sem dúvida," eu disse.
01:06
Here was a company trying to solve
19
51000
3000
Ali estava uma empresa tentando resolver
01:09
what's become this unimaginable problem for us chefs:
20
54000
3000
o que parecia ser um problema inimaginável para os chefs.
01:13
How do we keep fish on our menus?
21
58000
3000
Como manter peixe em nossos menus?
01:17
For the past 50 years,
22
62000
3000
Durante os últimos 50 anos,
01:20
we've been fishing the seas
23
65000
2000
estivemos pescando nossos mares
01:22
like we clear-cut forests.
24
67000
3000
como desmatamentos em florestas.
01:25
It's hard to overstate the destruction.
25
70000
3000
É difícil enfatizar a destruição.
01:30
Ninety percent of large fish, the ones we love --
26
75000
3000
90 por cento dos grandes peixes, os que amamos,
01:33
the tunas, the halibuts, the salmons, swordfish --
27
78000
3000
atuns, linguados, salmões, agulhões,
01:36
they've collapsed.
28
81000
2000
desapareceram.
01:38
There's almost nothing left.
29
83000
3000
Não restou quase nada.
01:41
So, for better or for worse,
30
86000
3000
Então, pra melhor ou pior,
01:44
aquaculture, fish farming, is going to be a part of our future.
31
89000
3000
aquacultura, piscicultura, será parte do futuro.
01:47
A lot of arguments against it:
32
92000
2000
Existem muitos argumentos contra.
01:49
Fish farms pollute -- most of them do anyway --
33
94000
3000
A criação de peixes polui, a maioria dos tipos,
01:52
and they're inefficient. Take tuna,
34
97000
2000
e é ineficiente, como no caso do atum.
01:54
a major drawback.
35
99000
2000
Que foi muito desestimulante.
01:56
It's got a feed conversion ratio
36
101000
2000
Tem uma taxa de conversão
01:58
of 15 to one.
37
103000
2000
de 15 para um.
02:00
That means it takes fifteen pounds of wild fish
38
105000
2000
Isso significa que custa quinze quilos de peixes selvagens
02:02
to get you one pound of farm tuna.
39
107000
3000
a criação de um quilo de atum.
02:06
Not very sustainable.
40
111000
2000
Não é muito sustentável.
02:08
It doesn't taste very good either.
41
113000
3000
E não é saboroso, também.
02:11
So here, finally,
42
116000
2000
Então aqui, finalmente,
02:13
was a company trying to do it right.
43
118000
2000
estava uma empresa tentando fazer a coisa certa.
02:15
I wanted to support them.
44
120000
2000
Eu queria apoiá-los.
02:18
The day before the event,
45
123000
2000
Na véspera do evento
02:20
I called the head of P.R. for the company.
46
125000
3000
liguei para o chefe de RP da empresa.
02:23
Let's call him Don.
47
128000
3000
Vamos chamá-lo de Don.
02:27
"Don," I said, "just to get the facts straight, you guys are famous
48
132000
3000
"Don," eu disse, "só pra deixar claro, vocês são famosos
02:30
for farming so far out to sea, you don't pollute."
49
135000
3000
por criar peixe em alto-mar, vocês não poluem."
02:33
"That's right," he said. "We're so far out,
50
138000
3000
"Isso mesmo," ele disse. "Estamos tão longe,
02:36
the waste from our fish gets distributed,
51
141000
3000
que os detritos de nossos peixes são distribuídos,
02:39
not concentrated."
52
144000
2000
não concentrados."
02:41
And then he added,
53
146000
2000
Então ele acrescentou,
02:43
"We're basically a world unto ourselves.
54
148000
3000
"Somos basicamente um mundo à parte.
02:47
That feed conversion ratio? 2.5 to one," he said.
55
152000
3000
A taxa de conversão? 2,5 para um," ele disse.
02:50
"Best in the business."
56
155000
2000
"A melhor do mercado."
02:52
2.5 to one, great.
57
157000
2000
2,5 para um, ótimo.
02:54
"2.5 what? What are you feeding?"
58
159000
2000
"2,5 para um o quê? O que vocês dão aos peixes?"
02:56
"Sustainable proteins," he said.
59
161000
3000
"Proteínas sustentáveis," ele disse.
02:59
"Great," I said. Got off the phone.
60
164000
3000
"Ótimo," eu disse. Terminei a ligação.
03:02
And that night, I was lying in bed, and I thought:
61
167000
3000
E naquela noite, deitado na cama, pensei:
03:05
What the hell is a sustainable protein?
62
170000
2000
O que diabos é uma proteína sustentável?
03:07
(Laughter)
63
172000
5000
(Risos)
03:12
So the next day, just before the event, I called Don.
64
177000
2000
Então, no dia seguinte, pouco antes do evento, liguei para Don.
03:14
I said, "Don, what are some examples of sustainable proteins?"
65
179000
4000
Eu disse, "Don, quais são alguns exemplos de proteínas sustentáveis?"
03:18
He said he didn't know. He would ask around.
66
183000
3000
Ele disse que não sabia. Ele iria procurar saber.
03:21
Well, I got on the phone with a few people in the company;
67
186000
2000
Bem, liguei pra outras pessoas da empresa.
03:23
no one could give me a straight answer
68
188000
3000
Ninguém me dava uma resposta direta.
03:26
until finally, I got on the phone
69
191000
3000
Até que, finalmente, consegui falar
03:29
with the head biologist.
70
194000
2000
com o biólogo chefe.
03:31
Let's call him Don too.
71
196000
2000
Vamos chamá-lo de Don, também.
03:33
(Laughter)
72
198000
4000
(Risos)
03:37
"Don," I said,
73
202000
2000
"Don," eu disse,
03:39
"what are some examples of sustainable proteins?"
74
204000
3000
"quais são alguns exemplos de proteínas sustentáveis?"
03:42
Well, he mentioned some algaes
75
207000
2000
Bem, ele mencionou algumas algas
03:44
and some fish meals,
76
209000
2000
e algumas coisas que peixes comem,
03:46
and then he said chicken pellets.
77
211000
2000
e então ele disse pastilhas de frango.
03:48
I said, "Chicken pellets?"
78
213000
2000
Eu disse, "Restos de frango?"
03:50
He said, "Yeah, feathers, skin,
79
215000
2000
Ele disse, "É, penas, pele,
03:52
bone meal, scraps,
80
217000
2000
ossos, restos,
03:54
dried and processed into feed."
81
219000
3000
secos e processados em alimento."
03:57
I said, "What percentage
82
222000
2000
Eu disse, "Que porcentagem
03:59
of your feed is chicken?"
83
224000
3000
da alimentação consiste em frango?"
04:02
Thinking, you know, two percent.
84
227000
3000
achando que seria, sabem, dois por cento.
04:05
"Well, it's about 30 percent," he said.
85
230000
3000
"Bem, é cerca de 30 por cento," ele disse.
04:08
I said, "Don, what's sustainable
86
233000
3000
Eu disse, "Don, como pode ser sustentável
04:11
about feeding chicken to fish?"
87
236000
2000
alimentar peixes com galinha?"
04:13
(Laughter)
88
238000
5000
(Risos)
04:18
There was a long pause on the line,
89
243000
3000
Houve uma longa pausa na linha,
04:21
and he said, "There's just too much chicken in the world."
90
246000
3000
e ele disse, "tem galinha demais no mundo."
04:24
(Laughter)
91
249000
6000
(Risos)
04:30
I fell out of love with this fish.
92
255000
2000
Eu perdi o amor por este peixe.
04:32
(Laughter)
93
257000
2000
(Risos)
04:34
No, not because I'm some self-righteous,
94
259000
3000
Não porque eu seja hipócrita,
04:37
goody-two shoes foodie.
95
262000
2000
um Caxias das comidas.
04:39
I actually am.
96
264000
2000
Até sou.
04:41
(Laughter)
97
266000
2000
(Risos)
04:43
No, I actually fell out of love with this fish because, I swear to God,
98
268000
2000
Não, eu realmente deixei de amar esse peixe porque, juro por Deus,
04:45
after that conversation, the fish tasted like chicken.
99
270000
3000
após a conversa, o peixe passou a ter gosto de frango.
04:48
(Laughter)
100
273000
10000
(Risos)
04:58
This second fish,
101
283000
3000
Este segundo peixe,
05:01
it's a different kind of love story.
102
286000
3000
é uma história de amor diferente.
05:04
It's the romantic kind,
103
289000
3000
É do tipo romântico,
05:07
the kind where the more you get to know your fish,
104
292000
3000
o tipo em que quanto mais você conhece seu peixe,
05:10
you love the fish.
105
295000
3000
mais o ama.
05:13
I first ate it at a restaurant
106
298000
2000
Eu o comi primeiro em um restaurante
05:15
in southern Spain.
107
300000
2000
ao sul da Espanha.
05:17
A journalist friend had been talking about this fish for a long time.
108
302000
3000
Uma amiga jornalista me falava sobre ele há muito tempo.
05:20
She kind of set us up.
109
305000
2000
Ela meio que nos arranjou.
05:22
(Laughter)
110
307000
2000
(Risos)
05:24
It came to the table
111
309000
2000
Ele veio à mesa
05:26
a bright, almost shimmering, white color.
112
311000
3000
um claro, quase brilhante, branco.
05:31
The chef had overcooked it.
113
316000
3000
O chef havia cozinhado demais.
05:34
Like twice over.
114
319000
3000
Tipo o dobro do necessário.
05:37
Amazingly, it was still delicious.
115
322000
3000
Surpreendentemente, continuava delicioso.
05:40
Who can make a fish taste good
116
325000
4000
Quem consegue fazer um peixe ter gosto bom
05:44
after it's been overcooked?
117
329000
2000
mesmo queimado?
05:46
I can't,
118
331000
2000
Eu não consigo,
05:48
but this guy can.
119
333000
2000
mas esse cara conseguiu.
05:50
Let's call him Miguel --
120
335000
2000
Vamos chamá-lo de Miguel.
05:52
actually his name is Miguel.
121
337000
2000
Seu nome é Miguel mesmo.
05:54
(Laughter)
122
339000
3000
(Risos)
05:57
And no, he didn't cook the fish, and he's not a chef,
123
342000
2000
E não, ele não cozinhou o peixe, e ele não é um chef.
05:59
at least in the way that you and I understand it.
124
344000
3000
Ao menos da maneira que eu e vocês entendemos.
06:03
He's a biologist
125
348000
2000
Ele é biólogo
06:05
at Veta La Palma.
126
350000
2000
em Veta La Palma.
06:07
It's a fish farm in the southwestern corner of Spain.
127
352000
3000
Uma criação de peixes no canto sudoeste da Espanha.
06:10
It's at the tip of the Guadalquivir river.
128
355000
3000
Fica na ponta do rio Gaudalquivir.
06:13
Until the 1980s,
129
358000
2000
Até os anos 1980,
06:15
the farm was in the hands of the Argentinians.
130
360000
3000
a fazenda era propriedade de argentinos.
06:18
They raised beef cattle
131
363000
2000
Eles criavam gado de abate
06:20
on what was essentially wetlands.
132
365000
3000
no que eram essencialmente pântanos.
06:23
They did it by draining the land.
133
368000
2000
Eles o faziam drenando a terra.
06:25
They built this intricate series of canals,
134
370000
3000
Eles construíram esta intricada série de canais,
06:28
and they pushed water off the land and out into the river.
135
373000
3000
e empurraram a água pra fora das terras e rio adentro.
06:32
Well, they couldn't make it work,
136
377000
2000
Bem, eles não conseguiram,
06:34
not economically.
137
379000
2000
não economicamente.
06:36
And ecologically, it was a disaster.
138
381000
3000
E ecologicamente, era um desastre.
06:39
It killed like 90 percent of the birds,
139
384000
2000
Matou 90 por cento dos pássaros,
06:41
which, for this place, is a lot of birds.
140
386000
3000
o que, para este lugar, significa muitos.
06:44
And so in 1982,
141
389000
2000
Então em 1982,
06:46
a Spanish company with an environmental conscience
142
391000
2000
uma empresa espanhola com consciência ambiental
06:48
purchased the land.
143
393000
2000
comprou a terra.
06:50
What did they do?
144
395000
2000
O que fizeram?
06:52
They reversed the flow of water.
145
397000
2000
Reverteram o fluxo da água.
06:54
They literally flipped the switch.
146
399000
2000
Eles literalmente viraram a chave.
06:56
Instead of pushing water out,
147
401000
2000
Ao invés de tirar a água,
06:58
they used the channels to pull water back in.
148
403000
2000
eles usaram os canais para trazer de volta a água.
07:00
They flooded the canals.
149
405000
2000
Eles alagaram os canais.
07:02
They created a 27,000-acre fish farm --
150
407000
4000
Eles criaram uma fazenda de peixes de 27000 acres --
07:06
bass, mullet,
151
411000
2000
robalo, tainha,
07:08
shrimp, eel --
152
413000
2000
camarão, enguia --
07:11
and in the process, Miguel and this company
153
416000
3000
e no processo, Miguel e sua empresa,
07:14
completely reversed the ecological destruction.
154
419000
3000
reverteram completamente a destruição ecológica.
07:18
The farm's incredible.
155
423000
2000
A fazenda é incrível.
07:20
I mean, you've never seen anything like this.
156
425000
3000
Digo, vocês nunca viram nada como isso.
07:23
You stare out at a horizon
157
428000
3000
Você olha para o horizonte
07:26
that is a million miles away,
158
431000
2000
que fica a um milhão de milhas,
07:28
and all you see are flooded canals
159
433000
2000
e tudo o que vê são canais alagados
07:30
and this thick, rich marshland.
160
435000
3000
e esta terra rica e espessa.
07:35
I was there not long ago with Miguel.
161
440000
3000
Estive lá há pouco tempo atrás com Miguel.
07:38
He's an amazing guy,
162
443000
3000
Ele é um cara incrível,
07:41
like three parts Charles Darwin and one part Crocodile Dundee.
163
446000
3000
três partes, Charles Darwin, uma parte Crocodilo Dundee.
07:44
(Laughter)
164
449000
2000
(Risos)
07:46
Okay? There we are slogging through the wetlands,
165
451000
3000
Ok? Estávamos lá, andando pela lama,
07:50
and I'm panting and sweating, got mud up to my knees,
166
455000
2000
e eu estava arfando e suado, tinha lama até meus joelhos,
07:52
and Miguel's calmly conducting a biology lecture.
167
457000
3000
e Miguel calmamente conduzia uma palestra sobre biologia.
07:56
Here, he's pointing out a rare Black-shouldered Kite.
168
461000
2000
Aqui, ele está mostrando um raro peneireiro-cinzento.
07:59
Now, he's mentioning the mineral needs of phytoplankton.
169
464000
3000
Agora, ele está mencionando as necessidades minerais do fitoplâncton.
08:03
And here, here he sees a grouping pattern
170
468000
3000
E aqui, ele vê um padrão no agrupamento
08:06
that reminds him of the Tanzanian Giraffe.
171
471000
3000
que lhe lembra o das girafas da Tanzânia.
08:11
It turns out, Miguel spent the better part of his career
172
476000
3000
Pelo visto, Miguel passou boa parte de sua carreira
08:14
in the Mikumi National Park in Africa.
173
479000
3000
no Parque Nacional Mikumi, na África.
08:17
I asked him how he became
174
482000
2000
Eu perguntei a ele como ele se tornou
08:19
such an expert on fish.
175
484000
2000
um expert em peixes.
08:21
He said, "Fish? I didn't know anything about fish.
176
486000
3000
Ele disse, "Peixe? Eu não sabia nada sobre peixe.
08:24
I'm an expert in relationships."
177
489000
3000
Sou expert em relacionamentos."
08:27
And then he's off, launching into more talk
178
492000
2000
E então ele saiu falando mais
08:29
about rare birds and algaes
179
494000
2000
sobre pássaros e algas
08:31
and strange aquatic plants.
180
496000
2000
e estranhas plantas aquáticas.
08:33
And don't get me wrong, that was really fascinating, you know,
181
498000
3000
E não me levem a mal, era realmente fascinante, sabem,
08:36
the biotic community unplugged, kind of thing.
182
501000
3000
tipo a versão acústica da comunidade biológica.
08:39
It's great, but I was in love.
183
504000
3000
Era ótimo, mas eu estava apaixonado.
08:42
And my head was swooning over that
184
507000
3000
E minha mente estava obcecada com aquele
08:45
overcooked piece of delicious fish I had the night before.
185
510000
3000
delicioso peixe queimado que eu tinha comido na noite anterior.
08:48
So I interrupted him. I said,
186
513000
2000
Então o interrompi. Eu disse,
08:50
"Miguel, what makes your fish taste so good?"
187
515000
2000
"Miguel, o que faz o gosto do seu peixe ser tão bom?"
08:52
He pointed at the algae.
188
517000
2000
Ele apontou as algas.
08:54
"I know, dude, the algae, the phytoplankton,
189
519000
3000
"Eu sei, cara, as algas, o fitoplâncton,
08:57
the relationships: It's amazing.
190
522000
3000
os relacionamentos, é fantástico.
09:00
But what are your fish eating?
191
525000
2000
Mas o que os peixes daqui comem?
09:02
What's the feed conversion ratio?"
192
527000
3000
Qual a taxa de conversão?"
09:05
Well, he goes on to tell me
193
530000
3000
Bem, ele me diz
09:09
it's such a rich system
194
534000
2000
que é um sistema tão rico,
09:11
that the fish are eating what they'd be eating in the wild.
195
536000
3000
que os peixes comem o que comeriam se fossem selvagens.
09:14
The plant biomass, the phytoplankton,
196
539000
3000
A biomassa vegetal, o fitoplâncton,
09:17
the zooplankton, it's what feeds the fish.
197
542000
2000
o zooplâncton, é o que alimenta os peixes.
09:19
The system is so healthy,
198
544000
2000
O sistema é tão saudável,
09:21
it's totally self-renewing.
199
546000
2000
que é totalmente renovável.
09:23
There is no feed.
200
548000
2000
Não há alimentação.
09:26
Ever heard of a farm that doesn't feed its animals?
201
551000
3000
Já ouviram falar de uma fazenda que não alimenta os animais?
09:33
Later that day, I was driving around this property with Miguel,
202
558000
2000
Mais tarde, eu estava dirigindo pela propriedade com Miguel,
09:35
and I asked him, I said, "For a place that seems so natural,
203
560000
4000
e eu perguntei a ele, eu disse, "Para um lugar que parece tão natural,"
09:39
unlike like any farm I'd ever been at,
204
564000
3000
diferente de qualquer fazenda que já visitei,
09:44
how do you measure success?"
205
569000
3000
como o sucesso é medido?"
09:47
At that moment, it was as if
206
572000
3000
Neste momento, foi como se
09:50
a film director called for a set change.
207
575000
2000
um diretor mandasse mudar o cenário.
09:52
And we rounded the corner
208
577000
2000
E fizemos uma curva
09:54
and saw the most amazing sight:
209
579000
2000
e tivemos a mais impressionante visão,
09:56
thousands and thousands of pink flamingos,
210
581000
3000
milhares e milhares de flamingos,
09:59
a literal pink carpet for as far as you could see.
211
584000
4000
praticamente um tapete rosa.
10:03
"That's success," he said.
212
588000
2000
"Isto é o sucesso," ele disse.
10:06
"Look at their bellies, pink.
213
591000
2000
"Olhe para suas barrigas, rosa.
10:08
They're feasting."
214
593000
2000
Estão empanturrados."
10:10
Feasting? I was totally confused.
215
595000
2000
Empanturrados? Eu estava confuso.
10:12
I said, "Miguel, aren't they feasting on your fish?"
216
597000
2000
Eu disse, "Miguel, eles não estão empanturrados de seu peixe?"
10:14
(Laughter)
217
599000
2000
(Risos)
10:16
"Yes," he said.
218
601000
2000
"Sim," ele disse.
10:18
(Laughter)
219
603000
6000
(Risos)
10:24
"We lose 20 percent of our fish
220
609000
2000
"Perdemos 20 por cento de nossos peixes
10:26
and fish eggs to birds.
221
611000
3000
e ovas para os pássaros.
10:30
Well, last year, this property
222
615000
2000
Bem, no ano passado, esta propriedade
10:32
had 600,000 birds on it,
223
617000
2000
abrigava 600.000 pássaros,
10:34
more than 250 different species.
224
619000
2000
de mais de 250 espécimes.
10:36
It's become, today, the largest
225
621000
3000
Tornou-se, hoje, o maior
10:39
and one of the most important
226
624000
3000
e um dos mais importantes
10:42
private bird sanctuaries in all of Europe."
227
627000
4000
santuários de pássaros privados da Europa."
10:46
I said, "Miguel, isn't a thriving bird population
228
631000
3000
Eu disse, "Miguel, uma população crescente de aves
10:49
like the last thing you want on a fish farm?"
229
634000
2000
não seria a última coisa desejável em uma criação de peixes?"
10:51
(Laughter)
230
636000
2000
(Risos)
10:53
He shook his head, no.
231
638000
2000
Ele balança a cabeça, não.
10:55
He said, "We farm extensively,
232
640000
3000
Ele disse, "Criamos extensivamente,
10:58
not intensively.
233
643000
3000
e não intensivamente.
11:01
This is an ecological network.
234
646000
3000
Esta é uma rede ecológica.
11:04
The flamingos eat the shrimp.
235
649000
2000
Os flamingos comem camarão.
11:06
The shrimp eat the phytoplankton.
236
651000
2000
Os camarões comem o fitoplâncton.
11:08
So the pinker the belly,
237
653000
2000
Então, o quanto mais rosadas as barrigas,
11:10
the better the system."
238
655000
3000
melhor o sistema."
11:13
Okay, so let's review:
239
658000
2000
Okay, vamos revisar.
11:15
a farm that doesn't feed its animals,
240
660000
3000
Uma fazenda que não alimenta seus animais,
11:18
and a farm that measures its success
241
663000
3000
uma fazenda que mede seu sucesso
11:21
on the health of its predators.
242
666000
2000
através da saúde dos predadores.
11:23
A fish farm, but also a bird sanctuary.
243
668000
3000
Uma fazenda de peixes, mas também santuário de pássaros.
11:26
Oh, and by the way, those flamingos,
244
671000
2000
Ah, por sinal, esses flamingos,
11:28
they shouldn't even be there in the first place.
245
673000
2000
não deveriam nem estar ali, pra começar.
11:30
They brood in a town
246
675000
2000
Eles nascem em uma cidade
11:32
150 miles away,
247
677000
2000
a 241 km de distância,
11:34
where the soil conditions
248
679000
2000
onde as condições do solo
11:36
are better for building nests.
249
681000
2000
sã melhores para seus ninhos.
11:38
Every morning, they fly
250
683000
2000
Todas as manhãs, eles voam
11:40
150 miles into the farm.
251
685000
2000
241 km para chegar à fazenda.
11:44
And every evening, they fly 150 miles back.
252
689000
3000
E toda noite, voltam 241 km.
11:47
(Laughter)
253
692000
5000
(Risos)
11:54
They do that because they're able to follow
254
699000
3000
Eles fazem isso porque são capazes de seguir
11:57
the broken white line
255
702000
2000
a intermitente linha branca
11:59
of highway A92.
256
704000
2000
da estrada A92.
12:01
(Laughter)
257
706000
2000
(Risos)
12:03
No kidding.
258
708000
2000
Sem brincadeira.
12:05
I was imagining a "March of the Penguins" thing,
259
710000
3000
Eu imaginava uma coisa feito a marcha dos pinguins,
12:08
so I looked at Miguel.
260
713000
2000
então olhei para Miguel.
12:10
I said, "Miguel, do they fly
261
715000
2000
E perguntei, "Miguel, eles voam
12:12
150 miles to the farm,
262
717000
2000
241 km para a fazenda,
12:14
and then do they fly
263
719000
2000
e então voam
12:16
150 miles back at night?
264
721000
2000
241 km de volta à noite?
12:18
Do they do that for the children?"
265
723000
3000
Eles fazem isso pela ninhada?"
12:21
He looked at me like I had just quoted a Whitney Houston song.
266
726000
3000
Ele olhou pra mim como se eu tivesse citado uma canção de Whitney Houston.
12:24
(Laughter)
267
729000
4000
(Risos)
12:28
He said, "No; they do it because the food's better."
268
733000
3000
Ele disse, "Não. Eles fazem isso porque a comida é melhor."
12:31
(Laughter)
269
736000
2000
(Risos)
12:33
I didn't mention the skin of my beloved fish,
270
738000
4000
Eu não mencionei a pele de meu amado peixe,
12:41
which was delicious -- and I don't like fish skin;
271
746000
2000
que era deliciosa, e eu não gosto de pele de peixe.
12:43
I don't like it seared, I don't like it crispy.
272
748000
3000
Não gosto queimada. Não gosto crocante.
12:46
It's that acrid, tar-like flavor.
273
751000
3000
É aquele sabor acre, como piche.
12:50
I almost never cook with it.
274
755000
2000
Eu quase nunca uso em meus pratos.
12:53
Yet, when I tasted it at that restaurant in southern Spain,
275
758000
3000
No entanto, quando provei naquele restaurante do sul da Espanha,
12:56
it tasted not at all like fish skin.
276
761000
3000
não parecia pele de peixe.
12:59
It tasted sweet and clean,
277
764000
3000
Seu sabor era doce e limpo
13:02
like you were taking a bite of the ocean.
278
767000
3000
como se déssemos uma mordida no oceano.
13:05
I mentioned that to Miguel, and he nodded.
279
770000
2000
Eu mencionei isto a Miguel, e ele assentiu.
13:07
He said, "The skin acts like a sponge.
280
772000
2000
Ele disse, "A pele age como uma esponja.
13:09
It's the last defense before anything enters the body.
281
774000
3000
É a última defesa do corpo antes que qualquer coisa entre.
13:12
It evolved to soak up impurities."
282
777000
2000
Evoluiu para filtrar impurezas."
13:14
And then he added,
283
779000
2000
E então ele acrescentou,
13:16
"But our water has no impurities."
284
781000
3000
"Mas nossa água não tem impurezas."
13:22
OK. A farm that doesn't feed its fish,
285
787000
3000
Okay. Uma fazenda que não alimenta seus peixes.
13:26
a farm that measures its success
286
791000
3000
Uma fazenda que mede seu sucesso
13:29
by the success of its predators.
287
794000
2000
através do sucesso de seus predadores.
13:31
And then I realized when he says,
288
796000
2000
E então eu percebi que quando ele diz,
13:33
"A farm that has no impurities,"
289
798000
3000
uma fazenda que não tem impurezas,
13:36
he made a big understatement,
290
801000
2000
ele faz uma grande atenuação,
13:38
because the water that flows through that farm
291
803000
2000
porque a água que corre esta fazenda
13:40
comes in from the Guadalquivir River.
292
805000
3000
vem do rio Guadalquivir.
13:43
It's a river that carries with it
293
808000
2000
É um rio que traz consigo
13:45
all the things that rivers tend to carry these days:
294
810000
3000
todas as coisas que rios trazem hoje em dia,
13:48
chemical contaminants,
295
813000
2000
contaminantes químicos,
13:50
pesticide runoff.
296
815000
2000
pesticidas.
13:52
And when it works its way through the system
297
817000
3000
E quando passa pelo sistema
13:55
and leaves,
298
820000
2000
e deixa,
13:57
the water is cleaner than when it entered.
299
822000
2000
a água está mais limpa que quando entrou.
13:59
The system is so healthy, it purifies the water.
300
824000
3000
O sistema e tão saudável, que purifica a água.
14:03
So, not just a farm that doesn't feed its animals,
301
828000
2000
Então, não apenas uma fazenda que não alimenta seus animais,
14:05
not just a farm that measures its success
302
830000
3000
não apenas uma fazenda que mede seu sucesso
14:08
by the health of its predators,
303
833000
2000
através da saúde de seus predadores,
14:10
but a farm that's literally a water purification plant --
304
835000
3000
mas uma fazenda que literalmente purifica água,
14:16
and not just for those fish,
305
841000
3000
e não apenas para aqueles peixes,
14:19
but for you and me as well.
306
844000
2000
mas para eu e vocês também.
14:21
Because when that water leaves, it dumps out into the Atlantic.
307
846000
3000
Porque quando a água sai, ela vai para o Atlântico.
14:26
A drop in the ocean, I know,
308
851000
2000
Uma gota no oceano, eu sei,
14:28
but I'll take it, and so should you,
309
853000
3000
mas eu aceito, e vocês também deveriam,
14:31
because this love story,
310
856000
3000
porque esta história de amor,
14:35
however romantic,
311
860000
2000
por mais romântica que seja,
14:37
is also instructive.
312
862000
2000
é também instrutiva.
14:39
You might say it's a recipe
313
864000
2000
Pode-se dizer que é uma receita
14:41
for the future of good food,
314
866000
2000
para o futuro da boa alimentação,
14:43
whether we're talking about bass or beef cattle.
315
868000
3000
estejamos falando de robalo ou de gado de corte.
14:47
What we need now is
316
872000
2000
O que precisamos agora é
14:49
a radically new conception of agriculture,
317
874000
3000
de um conceito radicalmente diferente de agricultura,
14:52
one in which the food actually tastes good.
318
877000
2000
um no qual o sabor da comida seja bom.
14:54
(Laughter)
319
879000
2000
(Risos)
14:56
(Applause)
320
881000
6000
(Aplausos)
15:02
But for a lot people,
321
887000
2000
Mas para muita gente,
15:04
that's a bit too radical.
322
889000
3000
isto é muito radical.
15:07
We're not realists, us foodies;
323
892000
2000
Não somos realistas, os amantes da comida.
15:09
we're lovers.
324
894000
2000
Somos amantes.
15:11
We love farmers' markets,
325
896000
2000
Amamos mercados agrícolas.
15:13
we love small family farms,
326
898000
3000
Amamos pequenas fazendas familiares.
15:16
we talk about local food,
327
901000
2000
Falamos de comida local.
15:18
we eat organic.
328
903000
3000
Comemos comida orgânica.
15:21
And when you suggest these are the things
329
906000
2000
E quando você sugere que estas são as coisas
15:23
that will ensure the future of good food,
330
908000
4000
que garantirão o futuro da boa comida,
15:27
someone, somewhere stands up and says,
331
912000
2000
alguém sempre se levanta e diz,
15:29
"Hey guy, I love pink flamingos,
332
914000
4000
"Ei, cara, eu adoro flamingos cor de rosa,
15:33
but how are you going to feed the world?"
333
918000
3000
mas como vamos alimentar o mundo?
15:36
How are you going to feed the world?
334
921000
3000
Como você vai alimentar o mundo?"
15:39
Can I be honest?
335
924000
2000
Posso ser honesto?
15:41
I don't love that question.
336
926000
3000
Eu não adoro esta pergunta.
15:44
No, not because we already produce
337
929000
2000
Não, não porque já produzimos
15:46
enough calories to more than feed the world.
338
931000
3000
calorias suficientes para mais que o mundo.
15:49
One billion people will go hungry today.
339
934000
3000
Um bilhão de pessoas vai passar fome hoje.
15:52
One billion -- that's more than ever before --
340
937000
3000
Um bilhão -- é mais que nunca antes --
15:56
because of gross inequalities in distribution,
341
941000
3000
devido a enorme desigualdade na distribuição,
15:59
not tonnage.
342
944000
2000
não na tonelagem.
16:02
Now, I don't love this question because it's determined the logic
343
947000
2000
Agora, eu não adoro esta questão porque ela determinou a lógica
16:04
of our food system for the last 50 years.
344
949000
3000
de nosso sistema alimentar dos últimos 50 anos.
16:07
Feed grain to herbivores,
345
952000
3000
Alimentar herbívoros com grãos,
16:10
pesticides to monocultures, chemicals to soil,
346
955000
2000
monoculturas com pesticidas, solo com produtos químicos,
16:12
chicken to fish,
347
957000
3000
peixe com galinha,
16:15
and all along agribusiness
348
960000
3000
e todo o agronegócio
16:18
has simply asked,
349
963000
2000
simplesmente diz,
16:20
"If we're feeding more people more cheaply,
350
965000
2000
"Se estamos alimentando mais gente, mais barato,
16:22
how terrible could that be?"
351
967000
3000
por que é tão terrível?"
16:25
That's been the motivation,
352
970000
2000
Esta tem sido a motivação.
16:27
it's been the justification:
353
972000
2000
Tem sido a justificativa.
16:29
it's been the business plan
354
974000
3000
Tem sido o plano de negócios
16:32
of American agriculture.
355
977000
2000
da agricultura americana.
16:34
We should call it what it is:
356
979000
2000
Deveríamos chamar isso do que realmente é,
16:36
a business in liquidation,
357
981000
3000
um negócio em liquidação,
16:39
a business that's quickly eroding
358
984000
3000
um negócio em rápida erosão
16:42
ecological capital that makes that very production possible.
359
987000
3000
do capital ecológico que torna possível esta produção.
16:45
That's not a business,
360
990000
2000
Não é apenas um negócio,
16:47
and it isn't agriculture.
361
992000
2000
e não é apenas agricultura.
16:49
Our breadbasket is threatened today,
362
994000
3000
Nossa cesta de pão está ameaçada,
16:52
not because of diminishing supply,
363
997000
2000
não por causa da diminuição de suprimentos,
16:54
but because of diminishing resources.
364
999000
3000
mas por causa da diminuição de recursos,
16:57
Not by the latest combine and tractor invention,
365
1002000
3000
não por falta de invenções para tracionar a terra,
17:00
but by fertile land;
366
1005000
2000
mas por falta de terra,
17:02
not by pumps, but by fresh water;
367
1007000
3000
não por falta de bombas, mas de água fresca,
17:05
not by chainsaws, but by forests;
368
1010000
3000
não por falta de motosserras, mas de florestas,
17:08
and not by fishing boats and nets, but by fish in the sea.
369
1013000
3000
e não por falta de pesqueiros e redes, mas de peixes no mar.
17:11
Want to feed the world?
370
1016000
2000
Quer alimentar o mundo?
17:13
Let's start by asking: How are we going to feed ourselves?
371
1018000
3000
Vamos começar: Como vamos alimentar a nós mesmos?
17:17
Or better: How can we create conditions
372
1022000
3000
Ou melhor, como criaremos condições
17:20
that enable every community
373
1025000
3000
que permitam a todas as comunidades
17:23
to feed itself?
374
1028000
2000
alimentarem a si mesmas?
17:25
(Applause)
375
1030000
7000
(Aplausos)
17:32
To do that,
376
1037000
2000
Para fazer isto,
17:34
don't look at the agribusiness model for the future.
377
1039000
3000
não espere usar o modelo do agronegócio no futuro.
17:37
It's really old, and it's tired.
378
1042000
2000
É realmente velho, e cansado.
17:39
It's high on capital, chemistry and machines,
379
1044000
4000
Custa muito capital, químicos, e máquinas,
17:43
and it's never produced anything really good to eat.
380
1048000
3000
e nunca produziu algo realmente bom de se comer.
17:48
Instead, let's look to the ecological model.
381
1053000
4000
Ao invés disso, usemos o modelo ecológico.
17:52
That's the one that relies on two billion years
382
1057000
3000
Aquele que se apóia em dois bilhões de anos
17:55
of on-the-job experience.
383
1060000
3000
de experiência no mercado.
17:58
Look to Miguel,
384
1063000
2000
Vejam Miguel,
18:00
farmers like Miguel.
385
1065000
2000
fazendeiros como Miguel,
18:02
Farms that aren't worlds unto themselves;
386
1067000
3000
fazendas que não são mundos à parte,
18:05
farms that restore instead of deplete;
387
1070000
5000
fazendas que restauram ao invés de exterminar,
18:10
farms that farm extensively
388
1075000
2000
fazendas extensivas,
18:12
instead of just intensively;
389
1077000
2000
ao invés de apenas intensivas,
18:14
farmers that are not just producers,
390
1079000
3000
fazendeiros que não são apenas produtores,
18:17
but experts in relationships.
391
1082000
2000
mas experts em relacionamentos,
18:19
Because they're the ones
392
1084000
2000
porque estes são aqueles
18:21
that are experts in flavor, too.
393
1086000
3000
especialistas em sabor, também.
18:24
And if I'm going to be really honest,
394
1089000
2000
E se eu for realmente honesto,
18:26
they're a better chef than I'll ever be.
395
1091000
3000
eles são melhores chefs do que eu jamais serei.
18:29
You know, I'm okay with that,
396
1094000
3000
Sabem, tudo bem por mim,
18:32
because if that's the future of good food, it's going to be delicious.
397
1097000
3000
porque se este é o futuro da boa comida, vai ser delicioso.
18:35
Thank you.
398
1100000
2000
Obrigado.
18:37
(Applause)
399
1102000
17000
(Aplausos)
