ABOUT THE SPEAKER
Arthur Potts Dawson - Green chef
Arthur Potts Dawson wants us to take responsibility not just for the food we eat, but how we shop for and even dispose of it. And he's showing the way -- with impeccable taste.

Why you should listen

Which came first, epicure or eco-warrior? For 23 years, Arthur Potts Dawson has worked alongside Britain's most respected chefs, including Hugh Fearnley-Whittingstall and Jamie Oliver. But his interest in food began during childhood, on a Dorset farm. "There was never much money around when I was growing up," he says. "We learned to turn lights off, put a jumper on instead of the heating."

This thrifty sensibility found expression in his acclaimed London restaurants Acorn House and Water House, opened in 2006. From rooftop gardens to low-energy refrigerators and wormeries that turn food waste into compost, these restaurants prove the profitability of an eco-friendly approach -- and serve as training grounds for the next generation of green chefs. Potts Dawson is now taking his crusade to kitchen tables, launching The People's Supermarket, a member-run cooperative supporting British farms, and cooking for Mrs Paisley's Lashings, a supper club whose profits fund urban gardens in London schools.

Restaurants and the food industry in general

3000
Restaurantet dhe industrit e ushqimit në përgjethsi
00:19
are pretty much the most wasteful industry
1
4000
2000
janë industrit me humbjet më të mëdha
00:21
in the world.
2
6000
2000
në botë.
00:23
For every calorie of food that we consume here in Britain today,
3
8000
3000
00:26
10 calories are taken to produce it.
4
11000
2000
10 kalori janë marrur për të prodhuar atë.
00:28
That's a lot.
5
13000
2000
Kjo është shumë.
00:30
I want to take something rather humble
6
15000
2000
Dëshiroj të marr diqka të përulur
00:32
to discuss.
7
17000
2000
për të diskutuarë.
00:34
I found this in the farmers' market today,
8
19000
2000
E gjeta këtë në tregun e farmerve sot,
00:36
and if anybody wants to take it home and mash it later, you're very welcome to.
9
21000
3000
00:39
The humble potato --
10
24000
2000
Patatet kokëulur --
00:41
and I've spent a long time, 25 years, preparing these.
11
26000
2000
dhe kam shpenzuar shumë kohë, 25 vite, përgatitjen e këtyre.
00:43
And it pretty much goes through
12
28000
2000
Dhe pothuajse shumica shkon
00:45
eight different forms in its lifetime.
13
30000
3000
00:48
First of all, it's planted, and that takes energy.
14
33000
3000
00:51
It grows and is nurtured.
15
36000
3000
Rritet dhe ushqehet.
00:54
It's then harvested.
16
39000
2000
Pastaj mbillet.
00:56
It's then distributed,
17
41000
2000
Pastaj shprendahet,
00:58
and distribution is a massive issue.
18
43000
2000
dhe shprendarja është një qështje masive.
01:00
It's then sold and bought,
19
45000
2000
Pastaj shitet dhe blehet,
01:02
and it's then delivered to me.
20
47000
2000
dhe pastaj më dërgohet mu.
01:04
I basically take it, prepare it,
21
49000
2000
Unë faktikisht e marrë pataten, e përgatiti,
01:06
and then people consume it -- hopefully they enjoy it.
22
51000
3000
01:09
The last stage is basically waste,
23
54000
2000
Hapi i fundit është mbetjet,
01:11
and this is is pretty much where everybody disregards it.
24
56000
3000
01:14
There are different types of waste.
25
59000
2000
Ka disa mbetje të ndryshme.
01:16
There's a waste of time; there's a waste of space; there's a waste of energy;
26
61000
3000
Është humbje e kohes; është humbja e hapësires; humbja e energjisë;
01:19
and there's a waste of waste.
27
64000
2000
dhe egzoston humbja e humbjeve.
01:21
And every business I've been working on
28
66000
2000
Dhe secili biznes që kam punuar
01:23
over the past five years,
29
68000
2000
pesë vitet e fundit,
01:25
I'm trying to lower each one of these elements.
30
70000
3000
01:28
Okay, so you ask what a sustainable restaurant looks like.
31
73000
3000
01:31
Basically a restaurant just like any other.
32
76000
2000
Faktikisht një restaurant si gjithë të tjerët.
01:33
This is the restaurant, Acorn House.
33
78000
2000
Ky është restauranti, Acro House.
01:35
Front and back.
34
80000
2000
Përpara dhe mbrapa.
01:37
So let me run you through a few ideas.
35
82000
3000
Pra më lejoni t'ju shëtis nepërmjet disa ideve.
01:40
Floor: sustainable, recyclable.
36
85000
2000
Dyshemeja.e qëndrueshme, reciklueshme.
01:42
Chairs: recycled and recyclable.
37
87000
3000
Karriget: të recikluar dhe të reciklueshme.
01:45
Tables: Forestry Commission.
38
90000
2000
Tavolinat: Komisjonet e pyejeve.
01:47
This is Norwegian Forestry Commission wood.
39
92000
2000
01:49
This bench, although it was uncomfortable for my mom --
40
94000
3000
Kjo bankë, edhe pse ishte e parehatëshme për maman time --
01:52
she didn't like sitting on it,
41
97000
2000
ajo nuk e pëlqeu të ulej në të,
01:54
so she went and bought these cushions for me from a local jumble sale --
42
99000
3000
01:57
reusing, a job that was pretty good.
43
102000
2000
ripërdorimin, e një punë qv ishte e mirë.
01:59
I hate waste, especially walls.
44
104000
2000
Unë i urrej mbetëjet, veqanarisht muret.
02:01
If they're not working, put a shelf on it, which I did,
45
106000
3000
02:04
and that shows all the customers my products.
46
109000
3000
02:07
The whole business is run on sustainable energy.
47
112000
2000
02:09
This is powered by wind. All of the lights are daylight bulbs.
48
114000
3000
Kjo është e furnizuar nga era. Të gjitha poqat janë ekonomike.
02:12
Paint is all low-volume chemical,
49
117000
2000
02:14
which is very important when you're working in the room all the time.
50
119000
2000
02:16
I was experimenting with these -- I don't know if you can see it --
51
121000
2000
02:18
but there's a work surface there.
52
123000
2000
mirpo është një sipërfaqe pune atje.
02:20
And that's a plastic polymer.
53
125000
2000
Dhe ajo është polimer plastikë.
02:22
And I was thinking, well I'm trying to think nature, nature, nature.
54
127000
2000
02:24
But I thought, no, no, experiment with resins,
55
129000
2000
Mirpo unë mendova, jo, jo eksperimente me resine,
02:26
experiment with polymers.
56
131000
2000
eksperimente me polymeret.
02:28
Will they outlive me? They probably might.
57
133000
2000
A do të me mbijetojnë mua? Ato ndoshta edhe munden.
02:30
Right, here's a reconditioned coffee machine.
58
135000
2000
02:32
It actually looks better than a brand new one -- so looking good there.
59
137000
3000
02:35
Now reusing is vital.
60
140000
3000
Tani ripërdorimi është i vitalë.
02:38
And we filter our own water.
61
143000
2000
Dhe ne e filtrojmë ujin tonë.
02:40
We put them in bottles, refrigerate them,
62
145000
2000
Ne i vendosim ato në shishe, i rigjenerojmë ato,
02:42
and then we reuse that bottle again and again and again.
63
147000
2000
dhe pastaj ne e ripërdorim atë shishe prapë dhe prapë.
02:44
Here's a great little example.
64
149000
2000
Këtu është një shembull i mirë.
02:46
If you can see this orange tree, it's actually growing in a car tire,
65
151000
2000
02:48
which has been turned inside out and sewn up.
66
153000
2000
e cila është kthyer brenda nga jasht.
02:50
It's got my compost in it, which is growing an orange tree, which is great.
67
155000
3000
02:53
This is the kitchen, which is in the same room.
68
158000
2000
Kjo është kuzhina, e cila është po e njejta dhomë.
02:55
I basically created a menu that allowed people
69
160000
2000
02:57
to choose the amount and volume of food
70
162000
2000
të zgjedhin sasinë dhe volumin e ushqimit
02:59
that they wanted to consume.
71
164000
2000
që ata dëshironin ta konsumonin.
03:01
Rather than me putting a dish down,
72
166000
2000
Sesa unë të vendosi atë që dua,
03:03
they were allowed to help themselves to as much or as little as they wanted.
73
168000
3000
ata ishinë të lejuar t'ju ndihmojnë vetes së tyre aqë sa duhet aq sa dëshirojn.
03:06
Okay, it's a small kitchen. It's about five square meters.
74
171000
3000
Në rregull është një kuzhine e vogël. Është rreth pesë metra katrorë.
03:09
It serves 220 people a day.
75
174000
2000
I'u shërben 220 njerëzve në ditë.
03:11
We generate quite a lot of waste.
76
176000
2000
Ne gjenerojmë goxa shumë mbetje.
03:13
This is the waste room.
77
178000
2000
Kjo është dhoma e mbetjeve.
03:15
You can't get rid of waste.
78
180000
2000
Ju smund ta hiqni qafesh humbjen.
03:17
But this story's not about eliminating it, it's about minimizing it.
79
182000
3000
03:20
In here, I have produce and boxes
80
185000
3000
Jam këtu, kam prodhuar dhe paketuar
03:23
that are unavoidable.
81
188000
2000
të cilat janë të papranishme.
03:25
I put my food waste into this dehydrating, desiccating macerator --
82
190000
3000
Unë vendosi ushqimin time në maklatorë --
03:28
turns food into an inner material,
83
193000
3000
i cili e kthen ushqimin në material inertë,
03:31
which I can store and then compost later.
84
196000
2000
03:33
I compost it in this garden.
85
198000
3000
Unë e përodi atë në kopësht.
03:36
All of the soil you can see there is basically my food,
86
201000
3000
03:39
which is generated by the restaurant,
87
204000
2000
i cili është i gjeneruar nga restauranti,
03:41
and it's growing in these tubs, which I made out of storm-felled trees
88
206000
2000
03:43
and wine casks and all kinds of things.
89
208000
3000
03:46
Three compost bins --
90
211000
2000
Tri shporta të përpunuara
03:48
go through about 70 kilos of raw vegetable waste a week --
91
213000
2000
03:50
really good, makes fantastic compost.
92
215000
2000
ajo më e mira, e benë ushqimin fantastikë.
03:52
A couple of wormeries in there too.
93
217000
2000
Disa nxemse në të gjithashtu.
03:54
And actually one of the wormeries
94
219000
2000
Dhe faktikisht një nga krimbat
03:56
was a big wormery. I had a lot of worms in it.
95
221000
2000
ishte i madhe. Kishte shumë krimba në të.
03:58
And I tried taking the dried food waste,
96
223000
2000
04:00
putting it to the worms, going, "There you go, dinner."
97
225000
2000
04:02
It was like vegetable jerky,
98
227000
2000
Ishte sikruse një lëkundje vegjetarjane,
04:04
and killed all of them.
99
229000
2000
dhe i mbyti të gjithë.
04:06
I don't know how many worms [were] in there,
100
231000
2000
04:08
but I've got some heavy karma coming, I tell you.
101
233000
3000
mirpo kam disa karma të renda, unë mund t'ja them juve.
04:11
(Laughter)
102
236000
2000
(qeshen)
04:13
What you're seeing here is a water filtration system.
103
238000
3000
04:16
This takes the water out of the restaurant,
104
241000
2000
Kjo nxjerr ujin nga restauranti,
04:18
runs it through these stone beds -- this is going to be mint in there --
105
243000
3000
04:21
and I sort of water the garden with it.
106
246000
2000
04:23
And I ultimately want to recycle that, put it back into the loos,
107
248000
2000
04:25
maybe wash hands with it, I don't know.
108
250000
2000
04:27
So, water is a very important aspect.
109
252000
3000
Pra, uji është aspekti kryesorë.
04:30
I started meditating on that
110
255000
2000
Une fillova të meditojë në at
04:32
and created a restaurant called Waterhouse.
111
257000
3000
dhe krijova një restaurant të quajtur Waterhouse.
04:35
If I could get Waterhouse to be a no-carbon restaurant
112
260000
2000
04:37
that is consuming no gas to start with, that would be great.
113
262000
3000
04:40
I managed to do it.
114
265000
2000
Unë i'a arrita ta bejë atë.
04:42
This restaurant looks a little bit like Acorn House --
115
267000
2000
Ky restaurant pak a shumë duket si Acro House --
04:44
same chairs, same tables.
116
269000
2000
të njejta karrige, të njejtat tavolina.
04:46
They're all English and a little bit more sustainable.
117
271000
3000
04:49
But this is an electrical restaurant.
118
274000
2000
Mirpo ky është një restaurnt elektrikë.
04:51
The whole thing is electric, the restaurant and the kitchen.
119
276000
2000
04:53
And it's run on hydroelectricity,
120
278000
2000
Dhe funksionon në hidroelektricitet,
04:55
so I've gone from air to water.
121
280000
2000
pra kam shkuar nga ajri në ujë.
04:57
Now it's important to understand
122
282000
3000
Tani është e rendësishme ta kuptojmë
05:00
that this room
123
285000
2000
që kjo dhomë
05:02
is cooled by water, heated by water,
124
287000
2000
ftohet nga uji, ngrohet nga uji,
05:04
filters its own water,
125
289000
2000
e filtron ujin e saj,
05:06
and it's powered by water.
126
291000
2000
dhe furnizohet nga uji.
05:08
It literally is Waterhouse.
127
293000
2000
Literalisht është shtëpi uji.
05:10
The air handling system inside it --
128
295000
2000
Lëvizja e ajrit brenda tij --
05:12
I got rid of air-conditioning
129
297000
2000
Une i heqa qafesh klimat
05:14
because I thought there was too much consumption going on there.
130
299000
2000
05:16
This is basically air-handling.
131
301000
2000
Faktikisht kjo është lëvizje ajri.
05:18
I'm taking the temperature of the canal outside,
132
303000
2000
Po flasë për temperaturat jashtë,
05:20
pumping it through the heat exchange mechanism,
133
305000
2000
pompimin e tyre në mekanizmat e nxemjeve,
05:22
it's turning through these amazing sails on the roof,
134
307000
2000
kthehet nepërmjet këtyre velëve në qatij,
05:24
and that, in turn, is falling softly onto the people in the restaurant,
135
309000
3000
05:27
cooling them, or heating them, as the need may be.
136
312000
3000
duke i ftohur ata, apo nxehur ata siq dëshirojnë.
05:30
And this is an English willow air diffuser,
137
315000
2000
05:32
and that's softly moving
138
317000
2000
dhe kjo ecen butësisht
05:34
that air current through the room.
139
319000
2000
ai ajri nepërmjet dhomës.
05:36
Very advanced, no air-conditioning -- I love it.
140
321000
3000
Shumë e avancuar, pa klima -- e dashuroj atë.
05:39
In the canal, which is just outside the restaurant,
141
324000
2000
Në kanalë, i cili është jashtë restaurantit,
05:41
there is hundreds of meters of coil piping.
142
326000
2000
05:43
This takes the temperature of the canal
143
328000
2000
Kjo merr temperaturat e kanalit
05:45
and turns it into this four-degrees of heat exchange.
144
330000
3000
05:48
I have no idea how it works, but I paid a lot of money for it.
145
333000
3000
05:51
(Laughter)
146
336000
2000
(Qeshen)
05:53
And what's great is one of the chefs who works in that restaurant
147
338000
2000
05:55
lives on this boat -- it's off-grid; it generates all its own power.
148
340000
3000
jetonë në këtë anije -- ëshët jasht telave; e gjeneron elektriken e vetë.
05:58
He's growing all his own fruit, and that's fantastic.
149
343000
3000
06:01
There's no accident in names of these restaurants.
150
346000
2000
06:03
Acorn House is the element of wood; Waterhouse is the element of water;
151
348000
3000
Acorn House është elementi i drurit; shtëpija e ujit është elementi i ujit;
06:06
and I'm thinking, well, I'm going to be making
152
351000
3000
dhe po mendoj, mirë do të bejë
06:09
five restaurants based
153
354000
2000
pesë restaurante të bazuara
06:11
on the five Chinese medicine acupuncture specialities.
154
356000
4000
në pesë medicina Kineze speciale.
06:15
I've got water and wood. I'm just about to do fire.
155
360000
3000
Unë kam ujë dhe dru. Vetem duhet të bejë zjarrë.
06:18
I've got metal and earth to come.
156
363000
2000
Unë kam metal dhe tokë që vjen.
06:20
So you've got to watch your space for that.
157
365000
3000
Pra duhet të shiqosh specjet për atë.
06:23
Okay. So this is my next project.
158
368000
2000
Në rregull. Pra ky është projekti imë i ardhëshem.
06:25
Five weeks old,
159
370000
2000
Pesë javë i vjetër,
06:27
it's my baby, and it's hurting real bad.
160
372000
3000
06:30
The People's Supermarket.
161
375000
2000
Supermarketet e njerëzve.
06:32
So basically, the restaurants only really hit
162
377000
2000
Pra faktikisht, restaurantet vetem godasin
06:34
people who believed in what I was doing anyway.
163
379000
2000
06:36
What I needed to do was get food out
164
381000
2000
06:38
to a broader spectrum of people.
165
383000
2000
për një spektrum të gjër të njerëzve.
06:40
So people -- i.e., perhaps, more working-class --
166
385000
3000
pra njerëzit, psh, ndoshta , klasat e njerëzve puntor --
06:43
or perhaps people who actually believe in a cooperative.
167
388000
2000
apo ndoshta njerëzit që besojnë në korporatë.
06:45
This is a social enterprise,
168
390000
2000
Pra kjo është një ndërrmarrje socjale,
06:47
not-for-profit cooperative supermarket.
169
392000
3000
jo për profit.
06:50
It really is about the social disconnect
170
395000
2000
Faktikisht është rreth mos-lidhjes socjale
06:52
between food, communities
171
397000
2000
në mesë të ushqimit, komunikimit
06:54
in urban settings
172
399000
2000
në rregullimet urbane
06:56
and their relationship to rural growers --
173
401000
2000
dhe marëdhenjet të rritjeve rurale --
06:58
connecting communities in London to rural growers.
174
403000
2000
07:00
Really important.
175
405000
2000
Shumë e rendësishme.
07:02
So I'm committing to potatoes; I'm committing to milk;
176
407000
2000
Pra unë jam i përqendruar në patate; i përqendruar në qumësht;
07:04
I'm committing to leeks and broccoli -- all very important stuff.
177
409000
3000
Unë jam i përqendruar tek purrit dhe lulelakres -- të gjithë këtë gjëra te rendësishme.
07:07
I've kept the tiles; I've kept the floors;
178
412000
2000
Kam mbajtur pllakat; kam mbajtur dyshemetë;
07:09
I've kept the trunking; I've got in some recycled fridges;
179
414000
2000
kam mbajtur nenë vëzhgim; kam disa pamfrite të recikluar;
07:11
I've got some recycled tills; I've got some recycled trolleys.
180
416000
3000
kam disa paisje fiskale; kam disa karroca pastrimi të recikluara.
07:14
I mean, the whole thing is is super-sustainable.
181
419000
2000
Mendoj, e gjithë kjo është supër-e-qendrueshme.
07:16
In fact, I'm trying and I'm going to make this
182
421000
2000
në faktë, unë po provj dhe do ta bejë këtë
07:18
the most sustainable supermarket in the world.
183
423000
3000
supermarketinë më të qendrueshem në botë.
07:21
That's zero food waste.
184
426000
2000
Ajo është zero-humbje e ushqimit.
07:23
And no one's doing that just yet.
185
428000
2000
07:25
In fact, Sainsbury's, if you're watching,
186
430000
2000
07:27
let's have a go. Try it on.
187
432000
2000
le të shkojmë. Provone.
07:29
I'm going to get there before you.
188
434000
2000
Unë do të shkoj atje përpara juve.
07:31
So nature doesn't create waste
189
436000
3000
Pra natyra nuk krijonë mbetje
07:34
doesn't create waste as such.
190
439000
2000
nuk krijonë mbetje sikurse.
07:36
Everything in nature is used up in a closed continuous cycle
191
441000
3000
07:39
with waste being the end of the beginning,
192
444000
3000
me mbetjen në fund dhe në fillim,
07:42
and that's been something that's been nurturing me for some time,
193
447000
3000
07:45
and it's an important statement to understand.
194
450000
3000
07:48
If we don't stand up
195
453000
2000
Nese nuk ngritesh në kembë
07:50
and make a difference
196
455000
2000
dhe të bësh një ndryshim
07:52
and think about sustainable food,
197
457000
3000
dhe të mendosh rreth ushqimit të qendrueshem,
07:55
think about the sustainable nature of it,
198
460000
2000
të mendosh rreth natyres së qendrueshme,
07:57
then we may fail.
199
462000
2000
pastaj ndoshta mund të deshtosh.
07:59
But, I wanted to get up and show you
200
464000
2000
08:01
that we can do it if we're more responsible.
201
466000
2000
se ne mund ta bejmë nese jemi me të përgjëshem.
08:03
Environmentally conscious businesses are doable.
202
468000
3000
Ambientalisht të përqendruar nda biznesit.
08:06
They're here. You can see I've done three so far;
203
471000
3000
Ata janë këtu. Ju mund ti shihni, une i kam berë tri deri me tani;
08:09
I've got a few more to go.
204
474000
3000
Kam edhe disa tjera për ti berë.
08:12
The idea is embryonic.
205
477000
2000
Kjo është idea e embronit.
08:14
I think it's important.
206
479000
2000
Une mendoj se është e rendësishme.
08:16
I think that if we reduce, reuse, refuse
207
481000
3000
08:19
and recycle -- right at the end there --
208
484000
2000
dhe reciklojmë -- më në fund atje --
08:21
recycling is the last point I want to make;
209
486000
3000
reciklimi është pika e fundit që dëshiroj të bejë;
08:24
but it's the four R's, rather than the three R's --
210
489000
3000
mirpo është e katërta sesa e treta -
08:27
then I think we're going to be on our way.
211
492000
2000
08:29
So these three are not perfect -- they're ideas.
212
494000
3000
08:32
I think that there are many problems to come,
213
497000
3000
08:35
but with help, I'm sure I'm going to find solutions.
214
500000
3000
mirpo me ndihmë, unë jam i sugurit të gjej zgjidhje.
08:38
And I hope you all take part.
215
503000
2000
08:40
Thank you very much. (Applause)

Faliminderit shumë. ( Duartrokitje)
