ABOUT THE SPEAKER
Ann Cooper - Lunch lady
Ann Cooper cares -- a lot -- what kids eat for lunch. As the head of nutrition for Berkeley, California, schools, she serves organic, regionally sourced and sustainable meals to lots of lucky children.

Why you should listen

Ann Cooper has a frontline view of the daily battle to keep kids healthy -- and of the enemy, the processed-foods industries that, it sometimes seems, want to wrap every single thing that children eat in a fried coating and then a plastic bag. As the director of nutrition services for the Berkeley (California) Unified School District, she's an outspoken activist for serving fresh, sustainable food to kids. Her lively website, ChefAnn.com, rounds up recipes, links, and resources for food activism.

Cooper's influential program in Berkeley involves kids in every stage of the food they eat, from growing to disposing of it. And along the way, eating some delicious cafeteria lunches. She's also recently become one of the most enterprising members of Jamie Oliver's Food Revolution, launching TheLunchBox.org to give schools the resources and support they need to transform their menus and provide balanced, healthy meals. In line with that effort, she is partnering with Whole Foods on the Great American Salad Project (GASP), which will create fresh salad bars in over 300 schools around the U.S.

She's the author of several books, including Bitter Harvest, an examination of the food chain, and her latest, Lunch Lessons: Changing the Way We Feed Our Children.

00:41
Little kids孩子 couldn't不能 eat off the salad沙拉 bar酒吧,

00:43

00:46
When I took over this, I tried试着 to really figure数字 out,
13
31000
2000
00:48
like, what my vision视力 would be.
14
33000
2000
比方说,我的理想究竟是什么;
00:50
How do we really change更改 children's儿童 relationship关系 to food餐饮?
15
35000
2000
00:52
And I'll tell you why we need to change更改 it,
16
37000
2000
00:54
but we absolutely绝对 have to change更改 it.
17
39000
2000
00:56
And what I came来了 to understand理解 is,
18
41000
2000
00:58
we needed需要 to teach children孩子
19
43000
2000
01:00
the symbiotic共生 relationship关系
20
45000
2000
01:02
between之间 a healthy健康 planet行星, healthy健康 food餐饮 and healthy健康 kids孩子.
21

3000
01:05
And that if we don't do that, the antithesis对立,
22
50000
3000
01:10
is we're really going to become成为 extinct绝种,
24
55000
2000
01:12
because we're feeding馈送 our children孩子 to death死亡.
25
57000
2000
01:14
That's my premise前提.
26
59000
2000
01:16
We're seeing眼看 sick生病 kids孩子 get sicker病情加重 and sicker病情加重.
27
61000
2000
01:18
And the reason原因 this is happening事件, by and large,
28
63000
3000
01:21
is because of our food餐饮 system系统
29
66000
2000
01:23
and the way the government政府 commodifiescommodifies food餐饮,
30
68000
2000
01:25
the way the government政府 oversees监督 our food餐饮,
31
70000
2000
01:27
the way the USDAUSDA puts看跌期权 food餐饮 on kids'孩子们 plates
32
72000
3000
01:30
that's unhealthy不良, and allows允许 unhealthy不良 food餐饮 into schools学校.
33
75000
4000
01:34
And by -- tacitly默认, all of us send发送 our kids孩子,
34
79000
2000
01:36
or grandchildren孙子, or nieces侄女, or nephews侄子, to school学校
35
81000
3000
01:39
and tell them to learn学习, you know,
36
84000
2000
01:41
learn学习 what's in those schools学校.
37
86000
2000
01:43
And when you feed饲料 these kids孩子 bad food餐饮,
38
88000
2000
01:45
that's what they're learning学习. So that's really what this is all about.
39
90000
3000
01:48
The way we got here is because of big agribusiness农业.
40
93000
4000
01:52
We now live生活 in a country国家 where most of us don't decide决定,
41
97000
4000
01:56
by and large, what we eat. We see big businesses企业, Monsanto孟山都 and DuPont杜邦公司,
42
101000
3000
01:59
who brought out Agent代理人 Orange橙子 and stain-resistant抗污 carpet地毯.
43
104000
3000
如Monsanto(孟山都)和DuPont(杜邦),
02:02
They control控制 90 percent百分 of the commercially商业 produced生成 seeds种子 in our country国家.
44
107000
4000
02:06
These are -- 10 companies公司
45
111000
2000
02:08
control控制 much of what's in our grocery杂货 stores商店,
46
113000
2000
02:10
much of what people eat. And that's really, really a problem问题.
47
115000
4000
02:14
So when I started开始 thinking思维 about these issues问题
48
119000
2000
02:16
and how I was going to change更改 what kids孩子 ate,
49
121000
2000
02:18
I really started开始 focusing调焦 on what we would teach them.
50
123000
3000
02:21
And the very first thing
51
126000
2000
02:23
was about regional区域性 food餐饮 -- trying to eat food餐饮
52
128000
3000
02:26
from within our region地区.
53
131000
2000
02:28
And clearly明确地, with what's going on with fossil化石 fuel汽油 usage用法,
54
133000
2000
02:30
or when -- as the fossil化石 fuel汽油 is going away,
55
135000
3000
02:33
as oil hits点击 its peak oil,
56
138000
3000
02:36
you know, we really have to start开始 thinking思维 about whether是否 or not
57
141000
2000
02:38
we should, or could, be moving移动 food餐饮
58
143000
3000
02:41
1,500 miles英里 before we eat it.
59
146000
3000
02:44
So we talked to kids孩子 about that,
60
149000
2000
02:46
and we really start开始 to feed饲料 kids孩子 regional区域性 food餐饮.
61
151000
3000
02:49
And then we talk about organic有机 food餐饮.
62
154000
2000
02:51
Now, most school学校 districts can't really afford给予 organic有机 food餐饮,
63
156000
2000
02:53
but we, as a nation国家,
64
158000
2000
02:55
have to start开始 thinking思维 about
65
160000
2000
02:57
consuming消费, growing生长 and feeding馈送 our children孩子
66
162000
2000
02:59
food餐饮 that's not chock-full塞满 of chemicals化学制品.
67
164000
2000
03:01
We can't keep feeding馈送 our kids孩子 pesticides农药
68
166000
2000
03:03
and herbicides除草剂 and antibiotics抗生素 and hormones激素.
69
168000
3000
03:06
We can't keep doing that.
70
171000
2000
03:08
You know, it doesn't work.
71
173000
2000
03:10
And the results结果 of that are kids孩子 getting得到 sick生病.
72
175000
3000
03:13
One of my big soapboxessoapboxes right now is antibiotics
73
178000
4000
03:17
Seventy七十 percent百分 of all antibiotics抗生素 consumed消费 in America美国
74
182000
4000
03:21
is consumed消费 in animal动物 husbandry农事.
75
186000
2000
03:23
We are feeding馈送 our kids孩子 antibiotics抗生素
76
188000
3000
03:26
in beef牛肉 and other animal动物 protein蛋白 every一切 day.
77
191000
3000
03:32
And the result结果 of it is, we have diseases疾病.
79
197000
3000
03:35
We have things like E. coli大肠杆菌 that we can't fix固定,
80
200000
3000
03:38
that we can't make kids孩子 better when they get sick生病.
81
203000
3000
03:42
And, you know, certainly当然 antibiotics抗生素 have been over-prescribed过规定,
82
207000
4000
03:46
but it's an issue问题 in the food餐饮 supply供应.
83
211000
2000
03:48
One of my favorite喜爱 facts事实 is that
84
213000
2000
03:50
U.S. agriculture农业 uses使用 1.2 billion十亿 pounds英镑 of pesticides农药 every一切 year.
85
215000
4000
03:54
That means手段 every一切 one of us, and our children孩子,
86
219000
3000
03:57
consumes消耗 what would equal等于 a five-pound五磅 bag --
87
222000
2000
03:59
those bags包装袋 you have at home. If I had one here
88
224000
2000
04:01
and ripped撕开 it open打开,
89
226000
2000
04:03
and that pile I would have on the floor地板
90
228000
2000
04:05
is what we consume消耗 and feed饲料 our children孩子 every一切 year
91
230000
3000
04:08
because of what goes into our food餐饮 supply供应,
92
233000
3000
04:11
because of the way we consume消耗
93
236000
3000
04:14
produce生产 in America美国.
94
239000
2000
04:16
The USDAUSDA allows允许 these antibiotics抗生素,
95
241000
2000
04:18
these hormones激素 and these pesticides农药 in our food餐饮 supply供应,
96

2000

04:20
and the USDAUSDA paid支付 for this ad广告

买单。
04:24
Okay, we could talk about Rachel雷切尔 Carson卡森 and DDTDDT,
99
249000
3000
04:27
but we know it wasn't good for you and me.
100
252000
2000
04:29
And that is what the USDAUSDA allows允许 in our food餐饮 supply供应.
101
254000
3000
04:32
And that has to change更改, you know.
102
257000
3000
04:35
The USDAUSDA cannot不能 be seen看到 as
103
260000
2000

04:45
The antithesis对立 of this whole整个 thing is sustainable可持续发展 food餐饮.
107
270000
3000
04:48
That's what I really try and get people to understand理解.
108
273000
3000
04:51
I really try and teach it to kids孩子. I think it's the most important重要.
109
276000
3000
04:54
It's consuming消费 food餐饮 in a way
110
279000
2000
04:56
in which哪一个 we'll still have a planet行星,
111

05:02
all the negative impacts影响 we're seeing眼看.
114
287000
3000
05:05
It really is just a new idea理念.
115
290000
2000
05:07
I mean, people toss折腾 around sustainability可持续性,
116
292000
2000
05:09
but we have to figure数字 out what sustainability可持续性 is.
117
294000
3000
05:12
In less than 200 years年份, you know, just in a few少数 generations,
118
297000
2000
05:14
we've我们已经 gone走了 from being存在 200 --
119
299000
2000
120
301000
3000
05:19
to less than 2 percent百分 of farmers农民.
121
304000
2000
05:21
We now live生活 in a country国家 that has more prisoners囚犯 than farmers农民 --
122
306000
3000
05:28
And we spend 35,000 dollars美元
124
313000
2000
05:30
on average平均 a year keeping保持 a prisoner囚犯 in prison监狱,
125
315000
2000
05:32
and school学校 districts spend 500 dollars美元 a year
126
317000
4000
05:36
feeding馈送 a child儿童.
127
321000
2000
05:38
It's no wonder奇迹, you know, we have criminals罪犯.
128
323000
2000
05:40
(Laughter
129
325000
2000
05:42
And what's happening事件 is, we're getting得到 sick生病.
130
327000
3000
05:45
We're getting得到 sick生病 and our kids孩子 are getting得到 sick生病.
131
330000
4000
05:49
It is about what we feed饲料 them.
132
334000
3000
05:52
What goes in is what we are.
133
337000
2000
05:54
We really are what we eat.
134
339000

14:46
We really need to change更改 it.
344
871000
3000
14:49
It's going to take more money.
345
874000

14:51
Of course课程, it's not all about food餐饮; it's also about
346
876000

14:55
And one of the simple简单 things we can do
348
880000
2000
14:57
is put recess凹槽 before lunch午餐.
349
882000

14:59
It's sort分类 of this "duh" thing.

15:01
You know, if you have kids孩子 coming未来 into lunch午餐

15:03
and all they're going to do when they get out of lunch午餐 is go to have recess凹槽,
352
888000
3000

you see them just throw away their lunch午餐 so they can run outside.
353
891000
3000
15:09
And then, at one in the afternoon下午, they're totally完全 crashing轰然.
354
894000
3000
15:12
These are your children孩子 and grandchildren孙子 that are totally完全 melting融化 down
355
897000

15:14
when you pick them up, because they haven't没有 had lunch午餐.
356
899000
2000
15:16
So if the only thing they'd他们会 have to do after lunch午餐 is go to class,
357
901000
3000
15:19
believe me, they're going to sit there and eat their lunch午餐.
358
904000
3000
15:22
We need to --

15:34
And, you know, I'm not that better off now.
365
919000
3000
15:37
But we really have to educate教育.
366
922000
2000
15:39
We have to get academic学术的 institutions机构 to start开始 thinking思维
367
924000
3000
15:42
about ways方法 to teach people how to cook厨师 again,
368
927000
3000
15:45
because, of course课程, they don't --
369
930000

15:47
because we've我们已经 had this processed处理 food餐饮 in schools学校

16:07
And just remember

16:09
at very least最小 tacitly默认,
380
954000

16:11
this is what we're teaching教学 children孩子

16:16
I think if we're going to fix固定 this,

16:18
one of the things we have to do

16:20
is really change更改 how we have oversight疏忽

16:24
Instead代替 of the National国民 School学校 Lunch午餐 Program程序 being存在 under the USDAUSDA,
387
969000

16:27
I think it should be under CDCCDC.
388
972000
2000
16:29
If we started开始 to think about food餐饮

16:40
then I think we wouldn't不会 have corn玉米 dogs小狗
