ABOUT THE SPEAKER
Ann Cooper - Lunch lady
Ann Cooper cares -- a lot -- what kids eat for lunch. As the head of nutrition for Berkeley, California, schools, she serves organic, regionally sourced and sustainable meals to lots of lucky children.

Why you should listen

Ann Cooper has a frontline view of the daily battle to keep kids healthy -- and of the enemy, the processed-foods industries that, it sometimes seems, want to wrap every single thing that children eat in a fried coating and then a plastic bag. As the director of nutrition services for the Berkeley (California) Unified School District, she's an outspoken activist for serving fresh, sustainable food to kids. Her lively website, ChefAnn.com, rounds up recipes, links, and resources for food activism.

Cooper's influential program in Berkeley involves kids in every stage of the food they eat, from growing to disposing of it. And along the way, eating some delicious cafeteria lunches. She's also recently become one of the most enterprising members of Jamie Oliver's Food Revolution, launching TheLunchBox.org to give schools the resources and support they need to transform their menus and provide balanced, healthy meals. In line with that effort, she is partnering with Whole Foods on the Great American Salad Project (GASP), which will create fresh salad bars in over 300 schools around the U.S.

She's the author of several books, including Bitter Harvest, an examination of the food chain, and her latest, Lunch Lessons: Changing the Way We Feed Our Children.

00:32
And that's what I want to talk to you a little bit about today今天.
7

3000
00:35
These are some of my kids孩子 with a salad沙拉 bar酒吧.

00:37
I put salad沙拉 bars酒吧 in all of our schools學校 when I got there.
9

00:39
Everyone大家 says it couldn't不能 be doneDONE.
10
24000
2000
剛開始大家都覺得這樣做是行不通的;
00:41
Little kids孩子 couldn't不能 eat off the salad沙拉 bar酒吧,
11
26000
2000
00:43
big kids孩子 would spit in it -- neither也不 happened發生.
12
28000
3000
00:46
When I took over this, I tried試著 to really figure數字 out,
13
31000
2000
00:48
like, what my vision視力 would be.
14
33000
2000
00:50
How do we really change更改 children's兒童 relationship關係 to food餐飲?
15
35000
2000
00:52
And I'll tell you why we need to change更改 it,
16
37000
2000
00:54
but we absolutely絕對 have to change更改 it.
17
39000
2000
00:56
And what I came來了 to understand理解 is,
18
41000
2000
00:58
we needed需要 to teach children孩子
19
43000
2000
01:00
the symbiotic共生 relationship關係
20
45000
2000
01:02
between之間 a healthy健康 planet行星, healthy健康 food餐飲 and healthy健康 kids孩子.
21
47000
3000
01:05
And that if we don't do that, the antithesis對立,
22
50000
3000
01:10
is we're really going to become成為 extinct絕種,
24
55000
2000
01:12
because we're feeding饋送 our children孩子 to death死亡.
25
57000
2000
01:14
That's my premise前提.
26
59000
2000
01:16
We're seeing眼看 sick生病 kids孩子 get sicker病情加重 and sicker病情加重.
27
61000
2000
01:18
And the reason原因 this is happening事件, by and large,
28
63000
3000
01:21
is because of our food餐飲 system系統
29
66000
2000
01:23
and the way the government政府 commodifiescommodifies food餐飲,
30
68000
2000
01:25
the way the government政府 oversees監督 our food餐飲,
31
70000
2000
01:27
the way the USDAUSDA puts看跌期權 food餐飲 on kids'孩子們 plates
32
72000
3000
01:30
that's unhealthy不良, and allows允許 unhealthy不良 food餐飲 into schools學校.
33
75000
4000
01:34
And by -- tacitly默認, all of us send發送 our kids孩子,
34
79000
2000
01:36
or grandchildren孫子, or nieces侄女, or nephews侄子, to school學校
35
81000
3000
01:39
and tell them to learn學習, you know,
36
84000
2000
01:41
learn學習 what's in those schools學校.
37
86000
2000
01:43
And when you feed飼料 these kids孩子 bad food餐飲,
38
88000
2000
01:45
that's what they're learning學習. So that's really what this is all about.
39
90000
3000
01:48
The way we got here is because of big agribusiness農業.
40
93000
4000
01:52
We now live生活 in a country國家 where most of us don't decide決定,
41
97000
4000
01:56
by and large, what we eat. We see big businesses企業, Monsanto孟山都 and DuPont杜邦公司,
42
101000
3000
01:59
who brought out Agent代理人 Orange橙子 and stain-resistant抗污 carpet地毯.
43
104000
3000
02:02
They control控制 90 percent百分 of the commercially商業 produced生成 seeds種子 in our country國家.
44
107000
4000
02:06
These are -- 10 companies公司
45
111000
2000
02:08
control控制 much of what's in our grocery雜貨 stores商店,
46
113000
2000
02:10
much of what people eat. And that's really, really a problem問題.
47
115000
4000
02:14
So when I started開始 thinking思維 about these issues問題
48
119000
2000
02:16
and how I was going to change更改 what kids孩子 ate,
49
121000
2000
02:18
I really started開始 focusing調焦 on what we would teach them.
50
123000
3000
02:21
And the very first thing
51
126000
2000
首先,
02:23
was about regional區域性 food餐飲 -- trying to eat food餐飲
52
128000
3000
02:26
from within our region地區.
53
131000
2000
02:28
And clearly明確地, with what's going on with fossil化石 fuel汽油 usage用法,
54
133000
2000
02:30
or when -- as the fossil化石 fuel汽油 is going away,
55
135000
3000
02:33
as oil hits點擊 its peak oil,
56
138000
3000
02:36
you know, we really have to start開始 thinking思維 about whether是否 or not
57
141000
2000
02:38
we should, or could, be moving移動 food餐飲
58
143000
3000
02:41
1,500 miles英里 before we eat it.
59
146000
3000
02:44
So we talked to kids孩子 about that,
60
149000
2000
02:46
and we really start開始 to feed飼料 kids孩子 regional區域性 food餐飲.
61
151000
3000
02:49
And then we talk about organic有機 food餐飲.
62
154000
2000
02:51
Now, most school學校 districts can't really afford給予 organic有機 food餐飲,
63
156000
2000
02:53
but we, as a nation國家,
64
158000
2000
02:55
have to start開始 thinking思維 about
65
160000
2000
02:57
consuming消費, growing生長 and feeding饋送 our children孩子
66
162000
2000
02:59
food餐飲 that's not chock-full塞滿 of chemicals化學製品.
67
164000
2000
03:01
We can't keep feeding饋送 our kids孩子 pesticides農藥
68
166000
2000
03:03
and herbicides除草劑 and antibiotics抗生素 and hormones激素.
69
168000
3000
03:06
We can't keep doing that.
70
171000
2000
03:08
You know, it doesn't work.
71
173000
2000
03:10
And the results結果 of that are kids孩子 getting得到 sick生病.
72
175000
3000
03:13
One of my big soapboxessoapboxes right now is antibiotics
73
178000
4000
03:17
Seventy七十 percent百分 of all antibiotics抗生素 consumed消費 in America美國
74
182000
4000
03:21
is consumed消費 in animal動物 husbandry農事.
75
186000
2000
03:23
We are feeding饋送 our kids孩子 antibiotics抗生素
76
188000
3000
03:26
in beef牛肉 and other animal動物 protein蛋白 every一切 day.
77
191000
3000
03:32
And the result結果 of it is, we have diseases疾病.
79
197000
3000
03:35
We have things like E. coli大腸桿菌 that we can't fix固定,
80
200000
3000
03:38
that we can't make kids孩子 better when they get sick生病.
81
203000
3000
03:42
And, you know, certainly當然 antibiotics抗生素 have been over-prescribed過規定,
82
207000
4000
03:46
but it's an issue問題 in the food餐飲 supply供應.
83
211000
2000
03:48
One of my favorite喜愛 facts事實 is that
84
213000
2000
03:50
U.S. agriculture農業 uses使用 1.2 billion十億 pounds英鎊 of pesticides農藥 every一切 year.
85
215000
4000
03:54
That means手段 every一切 one of us, and our children孩子,
86
219000
3000
03:57
consumes消耗 what would equal等於 a five-pound五磅 bag --
87
222000
2000
03:59
those bags包裝袋 you have at home. If I had one here
88
224000
2000
04:01
and ripped撕開 it open打開,
89
226000
2000
04:03
and that pile I would have on the floor地板
90
228000
2000
04:05
is what we consume消耗 and feed飼料 our children孩子 every一切 year
91
230000
3000
04:08
because of what goes into our food餐飲 supply供應,
92
233000
3000
04:11
because of the way we consume消耗
93
236000
3000
04:14
produce生產 in America美國.
94
239000
2000
04:16
The USDAUSDA allows允許 these antibiotics抗生素,
95
241000
2000
04:18
these hormones激素 and these pesticides農藥 in our food餐飲 supply供應,
96
243000
2000
04:20
and the USDAUSDA paid支付 for this ad廣告
97
245000
2000
04:22
in Time magazine雜誌.
98
247000
2000
04:24
Okay, we could talk about Rachel雷切爾 Carson卡森 and DDTDDT,
99
249000
3000
04:27
but we know it wasn't good for you and me.
100
252000
2000
04:29
And that is what the USDAUSDA allows允許 in our food餐飲 supply供應.
101
254000
3000
04:32
And that has to change更改, you know.
102
257000
3000
04:35
The USDAUSDA cannot不能 be seen看到 as
103
260000
2000
04:37
the be-all待所有 and end-all最終所有 of what we feed飼料
104
262000
3000
04:40
our kids孩子 and what's allowed允許.
105
265000
2000
04:42
We cannot不能 believe that they have our best最好 interests利益 at heart.
106
267000
3000
04:45
The antithesis對立 of this whole整個 thing is sustainable可持續發展 food餐飲.
107
270000
3000
04:48
That's what I really try and get people to understand理解.
108
273000
3000
04:51
I really try and teach it to kids孩子. I think it's the most important重要.
109
276000
3000
04:54
It's consuming消費 food餐飲 in a way
110
279000
2000
04:56
in which哪一個 we'll still have a planet行星,
111
281000
2000
04:58
in which哪一個 kids孩子 will grow增長 up to be healthy健康,
112
283000
2000
05:00
and which哪一個 really tries嘗試 to mitigate減輕
113
285000
2000
05:02
all the negative impacts影響 we're seeing眼看.
114
287000
3000
05:05
It really is just a new idea理念.
115
290000
2000
05:07
I mean, people toss折騰 around sustainability可持續性,
116
292000
2000
05:09
but we have to figure數字 out what sustainability可持續性 is.
117
294000
3000
05:12
In less than 200 years年份, you know, just in a few少數 generations,
118
297000
2000
05:14
we've我們已經 gone走了 from being存在 200 --
119
299000
2000
05:19
to less than 2 percent百分 of farmers農民.
121
304000
2000
05:21
We now live生活 in a country國家 that has more prisoners囚犯 than farmers農民 --
122
306000
3000
05:28
And we spend 35,000 dollars美元
124
313000
2000
05:30
on average平均 a year keeping保持 a prisoner囚犯 in prison監獄,
125
315000
2000
05:32
and school學校 districts spend 500 dollars美元 a year
126
317000
4000
05:36
feeding饋送 a child兒童.
127
321000
2000
05:38
It's no wonder奇蹟, you know, we have criminals罪犯.
128
323000
2000
05:40
(Laughter
129
325000
2000
05:42
And what's happening事件 is, we're getting得到 sick生病.
130
327000
3000
05:45
We're getting得到 sick生病 and our kids孩子 are getting得到 sick生病.
131
330000
4000
05:49
It is about what we feed飼料 them.
132

Of course課程, it's not all about food餐飲; it's also about

15:14
when you pick them up, because they haven't沒有 had lunch午餐.
356
899000
2000
15:16
So if the only thing they'd他們會 have to do after lunch午餐 is go to class,
357
901000
3000
15:19

And, you know, I'm not that better off now.
365
919000
3000
15:37
But we really have to educate教育.
366
922000
2000
15:39
We have to get academic學術的 institutions機構 to start開始 thinking思維
367
924000
3000
15:42
about ways方法 to teach people how to cook廚師 again,
368
927000
3000
15:45
because, of course課程, they don't --

17:32
about needing需要 8 billion十億 more, it's not a lot.
413
1037000
3000
17:35
That 8 billion十億 comes down to two dollars美元 and 49 cents --
414
1040000
3000
17:38
that's what the government政府 allocates分配 for lunch午餐.
415
1043000
3000
17:41
Most school學校 districts spend two thirds三分之二 of that on payroll工資表 and overhead高架.
416
1046000
3000
17:44
That means手段 we spend less than a dollar美元 a day
417
1049000
3000
17:47
on food餐飲 for kids孩子 in schools學校 --
418
1052000
2000
17:49
most schools學校, 80 to 90 cents. In L.A., it's 56 cents.
419
1054000
4000
17:54
So we're spending開支 less than a dollar美元, OK, on lunch午餐.
420
1059000
3000
17:57
Now I don't know about you,

2000
17:59
but I go to Starbucks星巴克 and Pete's皮特的 and places地方 like that,

18:04

18:06

425

2000
18:08
we spend more on than we are spending開支 to feed飼料 kids孩子
426
1073000
3000

18:14
in our schools學校.
428
1079000
2000
18:16
You know what? We should be ashamed
