01:21
Well, when I looked看著 into it,
28

01:22
I realized實現 that people
didn't look at it as their team球隊.
29

01:25
Ordinary普通 people, the way they looked看著

30
73760
3656
01:29
It's not an unusual異常 human人的 characteristic特性
31

01:35
We did it before, 10,000 years年份 ago,
when we came來了 out of our caves洞穴.
33
83640
3296
01:38
If you look at fire pits
from 10,000 years年份 ago,
34
86960
2536
01:41
you'll你會 see raccoons浣熊,
you'll你會 see, you know, wolves,
35

01:44
you'll你會 see all kinds
of different不同 creatures生物.
36
92120
2056
01:46
But if you telescope望遠鏡 to the age年齡 of --
you know, 2,000 years年份 ago,
37
94200
3656
01:49
you'll你會 see these four mammals哺乳動物:
38
97880
1896
01:51
pigs, cows奶牛, sheep and goats山羊.
39
99800
2416
01:54
It's true真正 of birds鳥類, too.
40
102240
1216
01:55
You look at the menus菜單
in New York紐約 City restaurants餐館
41
103480
2816
01:58
150 years年份 ago, 200 years年份 ago,
42
106320
1896
02:00
you'll你會 see snipe狙擊, woodcock, grouse松雞,
dozens許多 of ducks鴨子, dozens許多 of geese.
43
108240
4736
02:05
But telescope望遠鏡 ahead to the age年齡
of modern現代 animal動物 husbandry農事,
44
113000
2936
02:07
and you'll你會 see four:
45
115960
1376
02:09
turkeys火雞, ducks鴨子, chicken and geese.
46
117360
2040
02:12
So it makes品牌 sense
that we've我們已經 headed當家 in this direction方向.
47
120480
2576
02:15
But how have we headed當家 in this direction方向?
48
123080
1953
02:17
Well ...
49
125057
1199
02:18
first it's a very, very new problem問題.
50
126280
1856
02:20
This is the way we've我們已經 been fishing釣魚
the oceans海洋 over the last 50 years年份.
51
128160
3736
02:23
World世界 War戰爭 IIII was a tremendous巨大 incentive激勵
to arm ourselves我們自己 in a war戰爭 against反對 fish.
52
131920
5216
02:29
All of the technology技術
that we perfected完善 during World世界 War戰爭 IIII --
53
137160
3256
02:34
all these things
were redirected重定向 towards fish.
55
142120
2296
02:36
And so you see this tremendous巨大 buildup建立
in fishing釣魚 capacity容量,
56
144440
3416
02:39
quadrupling翻兩番 in the course課程 of time,
57
147880
1656
02:41
from the end結束 of World世界 War戰爭 IIII
to the present當下 time.
58
149560
2896
02:44
And right now that means手段
59
152480
1376
02:45
we're taking服用 between之間 80 and 90 million百萬
metric tons out of the sea every一切 year.
60
153880
3656
02:49
That's the equivalent當量
of the human人的 weight重量 of China中國
61
157560
3216
02:52
taken採取 out of the sea every一切 year.
62
160800
1536
02:54
And it's no coincidence巧合
that I use China中國 as the example
63
162360
2616
02:57
because China中國 is now
the largest最大 fishing釣魚 nation國家 in the world世界.
64
165000
3016
03:00
Well, that's only half the story故事.
65
168040
1616
03:01
The other half of the story故事
66
169680
1376
03:03
is this incredible難以置信 boom繁榮
in fish farming農業 and aquaculture水產養殖,
67
171080
4056
03:07
which哪一個 is now, only
in the last year or two,
68
175160
2216
03:09
starting開始 to exceed超過 the amount
of wild野生 fish that we produce生產.
69
177400
3376
03:12
So that if you add wild野生 fish
and farmed養殖 fish together一起,
70
180800
4016
03:16
you get the equivalent當量
of two Chinas中國 created創建 from the ocean海洋
71
184840
3456
03:20
each and every一切 year.
72
188320
1256
03:21
And again, it's not a coincidence巧合
that I use China中國 as the example,
73
189600
3136
03:24
because China中國, in addition加成
to being存在 the biggest最大 catcher捕手 of fish,
74
192760
3056
03:27
is also the biggest最大 farmer農民 of fish.
75
195840
2080
03:30
So let's look though雖然 at the four choices選擇
we are making製造 right now.
76
198840
4536
03:35
The first one --
77
203400
1216
首先
03:36
by far the most consumed消費 seafood海鮮
in America美國 and in much of the West西,
78
204640
3696
03:40
is shrimp.
79
208360
1216
03:41
Shrimp in the wild
as a wild野生 product產品 --
80
209600
2456
03:44
is a terrible可怕 product產品.
81
212080
1336
03:45
5, 10, 15 pounds英鎊 of wild野生 fish
are regularly經常 killed殺害
82
213440
4456
03:49
to bring帶來 one pound of shrimp
to the market市場.
83
217920
2416
03:52
They're also incredibly令人難以置信 fuel汽油 inefficient低效
to bring帶來 to the market市場.
84
220360
3096
03:55
In a recent最近 study研究 that was produced生成
out of Dalhousie達爾豪西 University大學,
85
223480
3096
03:58
it was found發現 that dragging拖延 for shrimp
86
226600
1816
04:00
is one of the most carbon-intensive碳密集型
ways方法 of fishing釣魚 that you can find.
87
228440
3840
04:04
So you can farm農場 them,
88
232640
1656
04:06
and people do farm農場 them,
89
234320
1256
04:07
and they farm農場 them a lot
in this very area.
90
235600
2016
04:09
Problem問題 is ...
91
237640
1216
04:10
the place地點 where you farm農場 shrimp
is in these wild野生 habitats棲息地 --
92
238880
3216
04:14
in mangrove紅樹 forests森林.
93
242120
1216
04:15
Now look at those lovely可愛
roots coming未來 down.
94
243360
2056
04:17
Those are the things
that hold保持 soil together一起,
95
245440
2096
for all sorts排序 of young年輕 fish, young年輕 shrimp,
96
247560
3776
04:23
all sorts排序 of things
that are important重要 to this environment環境.
97
251360
2777
04:26
Well, this is what happens發生
to a lot of coastal沿海 mangrove紅樹 forests森林.
98
254161
3000
04:29
We've我們已經 lost丟失 millions百萬 of acres
04:31
over the last 30 or 40 years年份.
100
259519
1416
04:32
That rate of destruction毀壞 has slowed放緩,
101
260959
2457
04:35
but we're still
in a major重大的 mangrove紅樹 deficit赤字.
102
263440
2600
04:38
The other thing that's going on here
103
266760
1736
04:40
is a phenomenon現象 that the filmmaker電影製片人
04:44
This phenomenon現象 is very, very relevant相應
105
272680
2496
04:47
to anything that you've ever seen看到
on a tropical熱帶 reef.
106
275200
2496
04:49
Because what's going on right now,
107
277720
1656
04:51
we have shrimp draggers拖動器
dragging拖延 for shrimp,
108
279400
2176
04:53
catching a huge巨大 amount of bycatch誤捕,
109
281600
1856
04:55
that bycatch誤捕 in turn gets得到 ground地面 up
and turned轉身 into shrimp food餐飲.
110
283480
4096
04:59
And sometimes有時, many許多 of these vessels船隻 --
111
287600
2136

05:03
are catching these so-called所謂 "trash垃圾 fish,"
113
291160
2696
05:05
fish that we would love to see on a reef,
114
293880
1953
05:07
grinding磨碎 them up
115
295857
1199

05:54
Well, we could also try to grow增長 tuna金槍魚
135
342240
1936
05:56
but tuna金槍魚 is a spectacularly壯觀 bad
05:59
Many許多 people don't know this
but tuna金槍魚 are warm-blooded溫血的.
137
347840
3096
06:02
They can heat their bodies身體 20 degrees

138
350960
3416
06:06
they can swim游泳 at over 40 miles英里 an hour小時.
139
354400
2096
06:08
So that pretty漂亮 much eliminates消除
140
356520

06:10
all the advantages優點

141
358280
2096
06:12
A farmed養殖 fish is --
142
360400

06:13
or a fish is cold-blooded冷血,
it doesn't move移動 too much.
143

06:16
That's a great thing for growing生長 protein蛋白.
144

06:18
But if you've got
this crazy, wild野生 creature生物
145
366120
2336
06:20
that swims游泳 at 40 miles英里 an hour小時
and heats預賽 its blood血液 --
146
368480
2496
06:23
not a great candidate候選人 for aquaculture水產養殖.
147
371000
2320

06:31
Now salmon三文魚 got its plundering掠奪, too,
151
379240
2176
06:33
but it didn't really necessarily一定
06:36
This is my home state of Connecticut
06:38
Connecticut康涅狄格 used to be home
to a lot of wild野生 salmon三文魚.
154
386400
3056
06:41
But if you look
at this map地圖 of Connecticut康涅狄格,
155
389480
2056
06:43
every一切 dot on that map地圖 is a dam.
156
391560
3000
06:47
There are over 3,000 dams水壩
in the state of Connecticut康涅狄格.
157
395400
3856
06:51
I often經常 say this is why people
in Connecticut康涅狄格 are so uptight緊張 --
158
399280
3536
06:54
(Laughter
159
402840
1576
06:56
If somebody could just
07:00
I feel that we could have
an infinitely無限地 better world世界.
161
408000
2496
07:02
But I made製作 this particular特定 comment評論
162
410520
1736
07:04
at a convention慣例 once一旦
of national國民 parks公園 officers長官,
163
412280
2656
07:06
and this guy from North Carolina卡羅來納州
sidled側身 up to me, he says,
164
414960
2736
07:09
"You know, you oughtn't不該 be so hard
on your Connecticut康涅狄格,
165
417720
3296
07:13
cause原因 we here in North Carolina卡羅來納州,
we got 35,000 dams水壩."
166
421040
4816
07:17
So it's a national國民 epidemic疫情,
it's an international國際 epidemic疫情.
167
425880
2856
07:20
And there are dams水壩 everywhere到處,
168
428760
1456
07:22
and these are precisely恰恰 the things
169
430240
1656
07:23
that stop wild野生 salmon三文魚
from reaching到達 their spawning產卵 grounds理由.
170
431920
2776
07:26
So as a result結果,
we've我們已經 turned轉身 to aquaculture水產養殖,
171
434720
2096
07:28
and salmon三文魚 is one the most successful成功,
at least最小 from a numbers數字 point of view視圖.
172
436840
3656
07:32
When they first started開始 farming農業 salmon三文魚,
173
440520
2216
07:34
it could take as many許多
as six pounds英鎊 of wild野生 fish
174
442760
2936
07:37
to make a single pound of salmon三文魚.
175
445720
2176
07:39
The industry行業 has, to its credit信用,
07:42
They've他們已經 gotten得到 it below下面 two to one,
177
450600
1667
07:44
although雖然 it's a little bit of a cheat作弊
178
452291
2285
07:46
because if you look at the way
07:49
they're measuring測量 pellets小球 --
180
457440
1456
07:50
pounds英鎊 of pellets小球 per pound of salmon三文魚.
181
458920
2256
07:53
Those pellets小球 are in turn reduced減少 fish.
182
461200
2656
07:55
So the actual實際 -- what's called the FIFOFIFO,
the fish in and the fish out --
183
463880
3496
07:59
kind of hard to say.
184
467400
1336
08:00
But in any case案件,
185
468760
1216
08:02
credit信用 to the industry行業,
186
470000
1216
08:03
it has lowered降低 the amount of fish
per pound of salmon三文魚.
187
471240
2576
08:05
Problem問題 is we've我們已經 also gone走了 crazy
188
473840
2176
08:08
with the amount of salmon三文魚
that we're producing生產.
189
476040
2216
08:10
Aquaculture水產養殖 is the fastest最快的 growing生長
food餐飲 system系統 on the planet行星.
190
478280
3616
08:13
It's growing生長 at something
like seven percent百分 per year.
191
481920
2976
08:16
And so even though雖然
we're doing less per fish
192
484920
4016
08:20
to bring帶來 it to the market市場,
193
488960
1296
08:22
we're still killing謀殺
a lot of these little fish.
194
490280
2736
08:25
And it's not just fish
that we're feeding饋送 fish to,
195
493040
3176
08:28
we're also feeding饋送 fish
to chickens and pigs.
196
496240
2600
08:31
So we've我們已經 got chickens
and they're eating fish,
197
499600
2936
08:34
but weirdly古怪, we also have fish
that are eating chickens.
198
502560
4256
08:38
Because the byproducts副產品 of chickens --
08:41
get ground地面 up and fed美聯儲 to fish.
200
509960
2296
08:44
So I often經常 wonder奇蹟,
201
512280
1216
08:45
is there a fish that ate
a chicken that ate a fish?
202
513520
3240
08:49
It's sort分類 of a reworking返工
of the chicken and egg thing.
203
517360
3016
08:52
(Laughter
204
520400
1096
08:53
All together一起, though雖然,
it results結果 in a terrible可怕 mess食堂.
205
521520
2776
08:56
What you're talking about
206
524320
1376
08:57
is something between之間 20 and 30 million百萬
metric tons of wild野生 creatures生物
207
525720
5656
09:03
that are taken採取 from the ocean海洋
and used and ground地面 up.
208
531400
2976
09:06
That's the equivalent當量
of a third第三 of a China中國,
209
534400
2056
09:08
or of an entire整個 United聯合的 States狀態 of humans人類
210
536480
2056
09:10
that's taken採取 out of the sea
each and every一切 year.
211
538560
2400
09:14
The last of the four
is a kind of amorphous非晶 thing.
212
542160
2536
09:16
It's what the industry行業 calls電話 "whitefish白魚."
213
544720
3496
09:20
There are many許多 fish that get cycled循環
into this whitefish白魚 thing
214
548240
2976
09:23
but the way to kind of tell
the story故事, I think,
215
551240
2216
09:25
is through通過 that classic經典 piece
of American美國 culinary烹飪 innovation革新,
216
553480
2936
09:29
So the Filet-O-Fish菲力-O-魚 sandwich三明治
09:32
And it started開始 because
09:35
found發現 that when he served提供服務
his McDonald's麥當勞 on Friday星期五, nobody沒有人 came來了.
220
563200
5536
09:40
Because it was a Catholic
community社區, they needed需要 fish.
221
568760
2536
09:43
So he went to Ray射線 Kroc克羅克 and he said,
222
571320
1856
09:45
"I'm going to bring帶來 you a fish sandwich三明治,
going to be made製作 out of halibut比目魚."
223
573200
3496
09:48
Ray射線 Kroc克羅克 said, "I don't think
it's going to work.
224
576720
2296
Ray Kroc
09:51
I want to do a Hula呼啦 Burger漢堡包,
225
579040
1296
09:52
and there's going to be
a slice of pineapple菠蘿 on a bun包子.
226
580360
2524
09:54
But let's do this, let's have a bet
227
582908
1736
that will be the winning勝利 sandwich三明治."
228
584668
3508
10:00
Well, it's kind of sad傷心 for the ocean海洋
that the Hula呼啦 Burger漢堡包 didn't win贏得.
229
588200
4336
10:04
So he made製作 his halibut比目魚 sandwich三明治.
230
592560
2136
the sandwich三明治 came來了 in at 30 cents.
231
594720
3336
10:10
Ray射線 wanted the sandwich三明治
to come in at 25 cents,
232
598080
2536
Ray
10:12
so he turned轉身 to Atlantic大西洋 cod鱈魚.
233
600640
1936
10:14
We all know what happened發生 to
Atlantic大西洋 cod鱈魚 in New England英國.
234
602600
2776
10:17
So now the Filet-O-Fish菲力-O-魚 sandwich三明治
is made製作 out of Alaska阿拉斯加州 pollock鱈魚,
235
605400
3496
10:20
it's the largest最大 fin fish fishery漁業
in the United聯合的 States狀態,
236
608920
2736
10:23
2 to 3 billion十億 pounds英鎊 of fish
taken採取 out of the sea every一切 single year.
237
611680
4376
10:28
If we go through通過 the pollock鱈魚,
238
616080
1536
10:29
the next下一個 choice選擇 is probably大概
going to be tilapia羅非魚.
239
617640
2456
10:32
Tilapia羅非魚 is one of those fish
nobody沒有人 ever heard聽說 of 20 years年份 ago.
240
620120
2976
10:35
It's actually其實 a very efficient高效 converter變流器
of plant protein蛋白 into animal動物 protein蛋白,
241
623120
4256
10:39
and it's been a godsend天賜
to the third第三 world世界.
242
627400
2056
10:41
It's actually其實 a tremendously異常
10:43
it goes from an egg
to an adult成人 in nine months個月.
244
631880
2216
10:46
The problem問題 is that when you
look about the West西,
245
634120
2336
10:48
it doesn't do what the West西
wants it to do.
246
636480
2016
10:50
It really doesn't have what's called
an oily油膩 fish profile輪廓.
247
638520
2736
10:53
It doesn't have the EPAEPA and DHADHA omega-Ω-3s
248
641280
2376
10:55
that we all think are going
to make us live生活 forever永遠.
249
643680
3296
10:59
So what do we do?
250
647000
1496
11:00
I mean, first of all,
what about this poor較差的 fish, the clupeidsclupeids?
251
648520
3176
11:03
The fish that represent代表 a huge巨大 part部分
of that 20 to 30 million百萬 metric tons.
252
651720
4440
11:08
Well, one possibility可能性
that a lot of conservationists保守主義者 have raised上調
253
656760
3056
11:11
is could we eat them?
254
659840
1616
11:13
Could we eat them directly
instead代替 of feeding饋送 them to salmon三文魚?
255
661480
2896
11:16
There are arguments參數 for it.
256
664400
1336
11:17
They are tremendously異常 fuel汽油 efficient高效
to bring帶來 to market市場,
257
665760
2620
11:20
a fraction分數 of the fuel汽油 cost成本
of say, shrimp,
258
668404
2092
11:22
and at the very top最佳
of the carbon efficiency效率 scale規模.
259
670520
3336
11:25
They also are omega-Ω-3 rich
a great source資源 for EPAEPA and DHADHA.
260
673880
4136
11:30
So that is a potential
261
678040
1456
11:31
And if we were to go down that route路線
what I would say is,
262
679520
3696
11:35
instead代替 of paying付款 a few少數 bucks雄鹿 a pound --
or a few少數 bucks雄鹿 a ton, really --
263
683240
3816
11:39
and making製造 it into aquafeed水產飼料,
264
687080
1976
11:41
could we halve對分 the catch抓住
and double the price價錢 for the fishermen漁民
265

11:44
and make that our way
of treating治療 these particular特定 fish?
266
692400
4120
which哪一個 is much more interesting有趣,
267
697200
2696
11:51
is looking at bivalves雙殼類,
11:54
Now, mussels青口貝 are very high in EPAEPA and DHADHA,
they're similar類似 to canned聽裝 tuna金槍魚.
269
702320
4936
11:59
They're also extremely非常 fuel汽油 efficient高效.
270
707280
1936
12:01
To bring帶來 a pound of mussels青口貝 to market市場
271
709240
1816
12:03
is about a thirtieth第三十 of the carbon
as required需要 to bring帶來 beef牛肉 to market市場.
272
711080
3616
12:06
They require要求 no forage飼料 fish,
273
714720
1576
12:08
they actually其實 get their omega-Ω-3s
by filtering濾波 the water of microalgae微藻.
274
716320
4256
12:12
In fact事實, that's where omega-Ω-3s come from,
they don't come from fish.
275
720600
3216
12:15
Microalgae微藻 make the omega-Ω-3s,
they're only bioconcentratedbioconcentrated in fish.
276
723840
4056
12:19
Mussels青口貝 and other bivalves雙殼類
277
727920
1256
12:21
do tremendous巨大 amounts of water filtration過濾.
278
729200
2000
12:23
A single mussel can filter過濾
dozens許多 of gallons加侖 every一切 single day.
279
731224
3552
12:26
And this is incredibly令人難以置信 important重要
when we look at the world世界.
280
734800
2776
12:29
Right now, nitrification
overuse過度使用 of phosphates磷酸鹽 in our waterways水路
281
737600
3576
12:33
12:35
Over 400 new dead zones
have been created創建 in the last 20 years年份,
283
743560
4256
12:39
tremendous巨大 sources來源 of marine海洋 life death死亡.
284
747840
3600
12:44
We also could look at not a fish at all.
285
752320
2176
12:46
We could look at a vegetable
286
754520
1416
12:47
We could look at seaweed海草, the kelps海帶,
287
755960
1736
12:49
all these different不同 varieties品種 of things
that can be high in omega-Ω-3s,
288
757720
3336
12:53
can be high in proteins蛋白質,
289
761080
1296
12:54
tremendously異常 good things.
290
762400
1616
12:56
They filter過濾 the water
just like mussels青口貝 do.
291
764040
2656
12:58
And weirdly古怪 enough足夠,
292
766720
1256
13:00
it turns out that you
can actually其實 feed飼料 this to cows奶牛.
293
768000
2616
13:02
Now, I'm not a big fan風扇 of cattle黃牛.
294
770640
2216
13:04
But if you wanted to keep growing生長 cattle黃牛
295
772880
1936
13:06
in a time and place地點
where water resources資源 are limited有限,
296
774840
2816
13:09
you're growing生長 seaweed海草 in the water,
you don't have to water it --
297
777680
3096
13:14
And the last fish is a question mark標記.
299
782480
2736
13:17
We have the ability能力
to create創建 aquacultured水產養殖 fish
300
785240
3856
13:21
that creates創建 a net gain獲得
of marine海洋 protein蛋白 for us.
301
789120
3416
13:24
This creature生物 would have to be vegetarian,
302
792560
2136
13:26
it would have to be fast快速 growing生長,
303
794720
1776
13:28
it would have to be adaptable適應性強
to a changing改變 climate氣候
304
796520
2656
13:31
and it would have to have
that oily油膩 fish profile輪廓,
305
799200
2336
13:33
that EPAEPA, DHADHA, omega-Ω-3
fatty脂肪 acid profile輪廓 that we're looking for.
306
801560
3896
13:37
This exists存在 kind of on paper.
307
805480
2936
13:40
I have been reporting報告
on these subjects主題 for 15 years年份.
308
808440
3616
13:44
Every一切 time I do a new story故事,
somebody tells告訴 me,
309
812080
2896
13:47
"We can do all that. We can do it.
We've我們已經 figured想通 it all out.
310
815000
2856
13:49
We can produce生產 a fish
311
817880
1216
13:51
that's a net gain獲得 of marine海洋 protein蛋白
and has omega-Ω-3s."
312
819120
2576
13:53
Great.
313
821720
1216
13:54
It doesn't seem似乎 to be getting得到 scaled縮放 up.
314
822960
2136
13:57
It is time to scale規模 this up.
315
825120
1736
13:58
If we do,
316
826880
1216
14:00
30 million百萬 metric tons of seafood海鮮,
a third第三 of the world世界 catch抓住,
317
828120
3496
14:03
stays入住 in the water.
318
831640
1200
14:05
So I guess猜測 what I'm saying is
this is what we've我們已經 been going with.
319
833880
3296
14:09
We tend趨向 to go with our appetites胃口
rather than our minds頭腦.
320
837200
3176
14:12
But if we went with this,
or some configuration組態 of it,
321
840400
3496
14:15
we might威力 have a little more of this.
322
843920
1715
14:19
Thank you.
323
847120
1216
