So what do we call this?
17
34000
2000
Alors comment appeler ceci?
00:51
I think we call it restorative seafood.
18
36000
3000
00:54
Where sustainability is the capacity

Green, yellow and red lists [of] seafood species.
32
73000
3000
01:31
The association is very easy: buy green, don't buy red,
33
76000
3000
L'association est simple : vert, achetez -- rouge, évitez
01:34
think twice about yellow.
34
79000
2000
jaune: pensez-y deux fois
01:36
But in my mind, it's really not enough
35
81000
2000
À mon avis, ça ne suffit pas
01:38
to just eat green list.
36
83000
2000
01:40
We can't sustain this without the measure of our success
37

But what if we eat only in the green list?

You've got pole-caught yellowfin tuna here --

Péché à la canne - aucune capture accessoire
01:57
Great for fishermen. Lots of money. Supporting local economies.
44
102000
3000
Très bien pour le pêcheur. Rentable. Supporte les économies locales.
02:00
But it's a lion of the sea. It's a top predator.
45
105000
3000
Mais c'est un lion de la mer. Un des grands prédateurs.
02:03
What's the context of this meal?
46
108000
2000
Quel est le contexte de ce repas?
02:05
Am I sitting down in a steakhouse to a 16-ounce portion of this?
47
110000
3000
02:08
Do I do this three times a week?
48
113000
2000
02:10
I might still be in the green list,
49
115000
2000
Je respecte peut-être le tableau vert,
02:12
but I'm not doing myself, or you,
50
117000
2000
02:14
or the oceans any favors.
51
119000
3000
ni aux océans
02:18
The point is that we have to have a context,
52
123000
2000
02:20
a gauge for our actions in all this.
53
125000
3000
un moyen de mesurer nos actions
02:23
Example: I've heard that red wine is great for my health --
54
128000
3000
02:26
antioxidants and minerals -- heart healthy.
55
131000
2000
02:28
That's great! I love red wine!
56
133000
2000
Excellent! J'adore le vin rouge!
02:30
I'm going to drink so much of it. I'm going to be so healthy.
57
135000
3000
Je vais en boire beaucoup. Je serai en très bonne santé.
02:33
Well, how many bottles is it
58
138000
2000
Alors, combien de bouteilles devrais-je boire
02:35
before you tell me that I have a problem?
59
140000
2000
02:37
Well folks, we have a protein problem.
60
142000
2000
Les amis, nous avons un problème protéitique
02:39
We have lost this sensibility
61
144000
2000
Nous avons perdu cette sensibilité
02:41
when it regards our food,
62
146000
2000
02:43
and we are paying a cost.
63
148000
2000
et nous payons la note
02:45
The problem is we are hiding that cost beneath the waves.
64
150000
3000
02:48
We are hiding that cost
65
153000
2000
Nous masquons les coûts
02:50
behind the social acceptance of expanding waistlines.
66
155000
2000
02:52
And we are hiding that cost behind monster profits.
67
157000
3000
02:56
So the first thing about this idea of restorative seafood
68
161000
2000
02:58
is that it really takes into account our needs.
69
163000
3000
03:01
Restorative seafood might best be represented
70
166000
2000
03:03
not by Jaws, or by Flipper, or the Gordon's fisherman,
71
168000
2000
03:05
but rather, by the Jolly Green Giant.
72
170000
3000
mais plutôt par le Géant vert gai
03:08
Vegetables:
73
173000
2000
Les légumes :
03:10
they might yet save the oceans.
74
175000
2000
ils pourront sauver les océans
03:12
Sylvia likes to say that blue is the new green.
75
177000
2000
03:14
Well I'd like to respectfully submit
76
179000
2000
Moi, j'aimerais soumettre l'idée
03:16
that broccoli green might then be the new blue.
77
181000
3000
que vert-broccoli est peut-être le nouveau "bleu".
03:20
We must continue to eat
78
185000
2000
Nous devons continuer à consommer
03:22
the best seafood possible, if at all.
79
187000
3000
03:25
But we also must eat it with a ton of vegetables.
80
190000
3000
03:28
The best part about restorative seafood though
81
193000
2000
03:30
is that it comes on the half-shell
82
195000
2000
03:32
with a bottle of Tabasco and lemon wedges.
83
197000
2000
03:34
It comes in a five-ounce portion of tilapia
84
199000
2000
03:36
breaded with Dijon mustard and crispy, broiled breadcrumbs
85
201000
3000
03:39
and a steaming pile of pecan quinoa pilaf
86
204000
2000
03:41
with crunchy, grilled broccoli
87
206000
2000
avec des brocollis rôtis, crousillants
03:43
so soft and sweet and charred and smoky on the outside
88
208000
2000
03:45
with just a hint of chili flake.
89
210000
2000
avec un soupçon de chilis broyés
03:47
Whooo!
90
212000
2000
Whooo!
03:49
This is an easy sell.
91
214000
2000
C'est facile à vendre.
03:51
And the best part is all of those ingredients are available
92
216000
2000
03:53
to every family at the neighborhood Walmart.
93
218000
3000
pour toutes les familles, chez Walmart

There's a pattern here.

Il existe une tendence
04:09
Forget nuclear holocaust;
99
234000
2000
Oublions les catatrophes nucléaires
04:11
it's the fork that we have to worry about.
100
236000
3000
04:14
We have ravaged our Earth
101
239000
2000
Nous avons dévasté la terre
04:16
and then used the food that we've sourced
102
241000
2000
04:18
to handicap ourselves in more ways than one.
103
243000
3000
04:21
So I think we have this whole eating thing wrong.
104
246000
3000
04:24
And so I think it's time
105
249000
2000
Je crois qu'il est temps
04:26
we change what we expect from our food.
106
251000
2000
04:28
Sustainability is complicated
107
253000
2000
La durabilité est compliquée
04:30
but dinner is a reality that we all very much understand.
108
255000
3000
04:33
So let's start there.
109
258000
2000
Débutons par ça
04:35
There's been a lot of movement recently in greening our food systems.
110
260000
3000

04:43
But green foods often represent
113
268000
2000
Mais la nourriture "verte" représente souvent
04:45
a way for us to disregard
114
270000
2000
une façon d'ignorer
04:47
the responsibility as eaters.
115
272000
2000
notre responsabilité en tant que consommateurs
04:49
Just because it comes from a green source
116
274000
2000
04:51
doesn't mean we can treat it with disregard on the plate.
117
276000
3000
04:55
We have eco-friendly shrimp.
118
280000
2000
Les crevettes écologiques existent.
04:57
We can make them; we have that technology.
119
282000
2000
04:59
But we can never have any eco-friendly all-you-can-eat shrimp buffet.
120
284000
4000
05:03
It doesn't work.
121
288000
2000
Ça ne fonctionne pas.
05:05
Heart-healthy dinner is a very important part
122
290000
3000
Un repas sain est une composante importante
05:08
of restorative seafood.

125

3000
05:16
Studies say that tens of thousands
126
301000
2000
05:18
of American grandmothers, grandfathers, mothers and fathers
127
303000
2000
de grand-mères, grand-pères, mères et pères américains
05:20
might be around for another birthday
128
305000
2000
célébront probablement leur prochain anniversaire
05:22
if we included more seafood.
129
307000
2000
05:24
That's a reward I am not willing to pass up.
130
309000
3000
05:27
But it's not all about the seafood.
131
312000
2000
05:29
It's about the way that we look at our plates.
132
314000
3000
05:32
As a chef, I realize the easiest thing for me to do
133
317000
2000
05:34
is reduce the portion sizes on my plate.
134
319000
3000
05:37
A couple things happened.
135
322000
2000
Quelques conséquences en sont découlées
05:39
I made more money.
136
324000
2000
J'ai fait plus d'argent
05:41
People started buying appetizers and salads,
137
326000
2000
05:43
because they knew they weren't going to fill up on the entrees alone.
138
328000
3000
05:46
People spent more time engaging in their meals,
139
331000
2000
05:48
engaging with each other over their meals.
140
333000
3000
05:51
People got, in short, more of what they came there for
141
336000
3000
05:54
even though they got less protein.
142
339000
2000
même s'ils recevaient moins de protéines
05:56
They got more calories over the course of a diversified meal.
143
341000
3000
05:59
They got healthier. I made more money.
144

Ils amélioraient leur santé. Je me faisais plus d'argent
06:01
This is great.
145
346000

C'est génial.
06:03
Environmental consideration was served with every plate,
146
348000

06:06
but it was served with a heaping mound
147
351000

et avec une abondance
06:08
of consideration for human interests at the same time.
148
353000
3000
06:12
One of the other things we did
149
357000
2000
Une autre chose que nous avions fait
06:14
was begin to diversify the species that we served --
150
359000
3000
était de diversifier les espèces servies --
06:17
small silverfish, anchovies, mackerel, sardines were uncommon.
151
362000
3000
06:20
Shellfish, mussels, oysters,
152
365000
2000
crustacé, mollusques, huîtres,
06:22
clams, tilapia, char -- these were the common species.
153
367000
3000
06:25
We were directing tastes
154
370000
2000
Nous dirigions les gôuts
06:27
towards more resilience, more restorative options.
155
372000
3000
vers des possibilités plus résilientes et restauratrices
06:31
This is what we need to favor.
156
376000
2000
C'est ceci que nous devions favoriser
06:33
This is what the green list says.
157
378000
2000
06:35
But this is also how we can actually begin to restore our environment.
158
380000
3000
06:38
But what of those big predators,
159
383000
2000
Mais quoi des prédateurs,
06:40
those fashionable species,
160
385000
2000
des espèces populaires,
06:42
that green list tuna that I was talking about earlier?
161
387000
3000
06:45
Well, if you must, I have a recipe for you.
162
390000
3000
06:48
It pretty much works with any big fish in the ocean,
163
393000
2000
06:50
so here we go.
164
395000
2000
donc, allons-y
06:52
Start with a 16-ounce portion of big fish.
165
397000
3000
06:55
Get a knife. Cut it into four portions.
166
400000
3000
Prenez votre couteau et coupez-le en quatre
06:58
Put it on four plates.
167
403000
2000
Placez sur quatre assiettes
07:00
Mound up those four plates with vegetables
168
405000
2000
07:02
and then open up the very best bottle of Burgundy you have,
169
407000
2000
et déboucher votre meilleure bouteille de Bourgogne
07:04
light the candles and celebrate it.
170
409000
3000
allumez des chandelles et célébrez
07:07
Celebrate the opportunity you have to eat this.
171
412000
2000
07:09
Invite your friends and neighbors over
172
414000
2000
Invitez vos amis et vos voisins
07:11
and repeat once a year,
173
416000
3000
et refaisez ceci une fois par année
07:14
maybe.
174
419000
2000
peut-être.
07:16
I expect a lot from food.
175
421000
2000
07:18
I expect health
176
423000
2000
Je m'attends d'être en santé
07:20
and joy and family and community.
177
425000
2000
07:22
I expect that producing ingredients,
178
427000
2000
07:24
preparing dishes and eating meals
179
429000
3000
la préparation et la consommation des repas
07:27
is all part of the communion of human interests.
180
432000
3000
07:30
I was lucky enough that my father was a fantastic cook.
181
435000
2000
J'étais chanceux que mon père était grand cuisinier.
07:32
And he taught me very early on
182
437000
2000
Il m'a expliqué, lorsque j'étais jeune,
07:34
about the privilege that eating represents.
183
439000
3000
qu'une bonne alimentation était un privilège
07:37
I remember well the meals of my childhood.
184
442000
2000
07:39
They were reasonable portions of protein
185
444000
2000
Des portions raisonnables de protéines
07:41
served with copious quantities of vegetables
186
446000
2000
07:43
and small amounts of starch, usually rice.
187
448000
2000
07:45
This is still how I largely eat today.
188
450000
3000
07:48
I get sick when I go to steakhouses.
189
453000
3000
ça me rend malade d'aller au grilladerie.
07:51
I get the meat sweats.
190
456000
2000
Ma chair transpire.
07:53
It's like a hangover from protein.
191
458000
2000
07:55
It's disgusting.
192
460000
2000
C'est dégoutant.
07:58
But of all the dire news that you'll hear
193
463000
3000
08:01
and that you have heard about the state of our oceans,
194
466000
2000
08:03
I have the unfortunate burden of delivering to you
195
468000
2000
08:05
possibly the very worst of it
196
470000
2000
possiblement ce qui est de pire,
08:07
and that is this whole time
197
472000
2000
que, pendant tout ce temps là,
08:09
your mother was right.
198
474000
2000
ta mère avait raison.
08:11
Eat your vegetables.
199
476000
3000
Mange tes légumes.
08:14
It's pretty straightforward.
200
479000
2000
C'est assez simple.
08:16
So what are we looking for in a meal?
201
481000
2000
Que recherchons-nous dans un repas?
08:18
Well for health, I'm looking for wholesome ingredients
202
483000
3000
08:21
that are good for my body.
203
486000
2000
qui soutiennent mon corps.
08:23
For joy, I'm looking for butter and salt
204
488000
2000
08:25
and sexy things that make things taste less like penance.
205
490000
3000
08:28
For family, I'm looking for recipes
206
493000
3000
Pour la famille, je recherche des recettes
08:31
that genuflect to my own personal histories.
207
496000
3000
qui rendent hommage à mon propre historique.
08:34
For community though, we start at the very beginning.
208
499000
3000
08:37
There's no escaping the fact
209
502000
2000
On ne peut pas éviter le fait
08:39
that everything we eat has a global impact.
210
504000
2000
08:41
So try and learn as best you can what that impact is
211
506000
2000
08:43
and then take the first step to minimize it.
212
508000
3000
08:47
We've seen an image of our blue planet,
213
512000
2000
08:49
our world bank.
214
514000
2000
notre banque mondiale
08:51
But it is more than just a repository of our resources;
215
516000
3000
Mais c'est beaucoup plus qu'un réservoir pour nos résources;
08:54
it's also the global geography
216
519000
3000
c'est aussi la géographie globale
08:57
of the communion we call dinner.
217
522000
3000
cette communion que nous appelons "dîner".
09:00
So if we all take only what we need,
218
525000
2000
09:02
then we can begin to share the rest,
219
527000
3000
ensuite, nous pourrons partager le restant
09:05
we can begin to celebrate,
220
530000
2000
nous pourrons célébrer
09:07
we can begin to restore.
221
532000
2000
nous pourrons commencer à restaurer.
09:09
We need to savor vegetables.
222
534000
2000
Il faut savourer les légumes
09:11
We need to savor smaller portions of seafood.
223
536000
3000
09:14
And we need to save dinner.
224
539000
2000
Et nous devons sauver le dîner.
09:16
Thank you.
225
541000
2000
Merci.
09:18
(Applause)
